[01:01] You know, we don’t get them when they’re beautifully ripe on the tree. 我们现在吃不到自然成熟的番茄
[01:04] That’s a thing that you can achieve 但如果你亲手种植 无论庭院大小
[01:06] in whatever size garden you’ve got, if you grow ’em yourself. 你都能收获到成熟的番茄
[01:08] So I’m gonna pick everything I can get my hands on 我要把园子里的番茄都采回去
[01:11] and then we’ll have a little cook-up. 然后来做点好吃的
[01:29] So, what I’m gonna make is, like, 我要做的是一道
[01:31] a clear, refreshing summer tomato consomme. 冰爽提神的夏日番茄清汤
[01:34] And I… I hate to say the word “consomme”, 我讨厌说”清汤”这个词
[01:37] because it reminds me of when I was trained, 这让我想起受训的那段时光
[01:39] and I had to make consomme God knows how many times. 天知道我炖了多少次清汤
[01:42] It’s quite, it’s quite a pretty sort of posh restaurant affair. 这道菜算是高档餐厅的菜品
[01:48] And normally, like, I’m not really into that, 通常我对这类菜品并不感冒
[01:50] I’m into sort of home cooking. 我更青睐家常菜
[01:51] But this, as a starter in the summer when it’s hot, 但作为盛夏时分的开胃小点
[01:55] is just like a slap round the face, gets your taste buds going, 这例汤如同一记耳光 唤醒你的味蕾
[01:58] ready for a lovely proper meal afterwards, 为随后的美味正餐做好铺垫
[02:01] but it’s so quick to do that I don’t mind it. 这道菜做法简单 我就现场演示一番
[02:04] What I want to do is get these tomatoes, about two kilos, 首先把大约两公斤的番茄
[02:06] into the food processor. 放进搅拌机
[02:08] I’m not gonna put quite all of them in there, 我不会全放进去
[02:09] because I’ve done it before 因为我以前试过
[02:12] and so it fills quite high to the top, 番茄汁差点溢出来
[02:13] and then I want some vodka. 然后加一些伏特加酒
[02:14] Now, the inspiration for this version is kind of like Bloody Mary, 这种做法的灵感来源于血腥玛丽
[02:18] a play on a Bloody Mary, 给血腥玛丽变变花样
[02:19] which is obviously your tomatoes, your vodka, 正如眼前这样 番茄 伏特加酒
[02:22] horseradish, couple of shots. 再配上点山葵 加几杯酒
[02:24] Right, and then horseradish. 说到山葵
[02:26] Horseradish and tomatoes work really well together, 它和番茄的味道特别搭
[02:28] they’re really good friends. 简直是绝配
[02:29] So I want a nice five centimetre bit, 切下一段五厘米长的山葵
[02:34] just sort of peeled, 把皮削掉
[02:36] or you can get little jars of the kind of pre-grated hot stuff, 或者可以用事先磨好的罐装山葵
[02:39] but not the stuff in cream, 不要用奶油状的
[02:41] just the grated horseradish. 用山葵碎末就行
[02:42] And you can kind of get the skin off 把皮丢掉
[02:45] and just…chop it up roughly if you want. 随意切成小块
[02:51] So, there you go, there’s your horseradish, in with the tomatoes, 然后把山葵块跟番茄放到一起
[02:53] the vodka, I want a good pinch of salt, a good pinch of pepper. 加点伏特加酒 撒一撮盐和胡椒
[02:58] I want a swig of vinegar, you think I’ve gone bonkers, 再加一大勺醋 你会认为我疯了
[03:02] right, about a tablespoon. 大约一汤匙的量
[03:03] Then basil. 接着放罗勒
[03:07] A little handful of basil like that and stalks, can go in there. 像这样一小把带茎的罗勒叶 放进去

[03:41] While I’m doing that, get yourself a bowl 打浆的时候 拿出一个大碗

[03:47] Now, you can get muslin in good kitchen shops, 好点的厨具店都能买到棉布
[03:50] you know, those household shops do it. 家用商品店也有卖的
[03:53] And also if you go to your butcher, 肉店里也能见到
[03:54] they use muslin to wrap the big joints of meat in 肉贩用棉布包着一大块肉
[03:57] and, you know, especially if you’re a young lady, 如果你是一位年轻小姐
[03:59] you can chat up the butcher, ask him for a free bit of muslin, 可以和肉贩搭讪 向他要块棉布
[04:02] like my nan used to in the war. 战争年代我奶奶就这么干
[04:05] My nan used to get extra portions of meat 我奶奶总能从屠夫那里
[04:08] from Louis Rutter, the local butcher. 多要到几块肉

[05:16] Now, you can see this colour here is a little bit bland. 你会发现汤汁颜色有点苍白
[05:21] So what I want to do, 我要做的是
[05:22] is just get a nice little slice of beetroot. 切下一小片甜菜头
[05:26] So I’m just gonna plop this in here. 把它丢进汤里
[05:31] And I’m gonna hang this in the fridge. 我打算把它挂进冰箱里
[05:33] You can almost see the colour coming out of that beetroot already. 你会发现甜菜的颜色已经渗了出来
[05:37] That’ll just give it a lovely sort of rosy wine colour. 把番茄汤染成可爱的玫红色
[05:40] So, just gonna whack this in the fridge, 把它挂在冰箱里就可以了
[05:43] sort of six, seven hours you can get a pretty good product. 六七个小时后 你就能喝到超棒的果汁了
[05:46] So you do it in the morning for dinner at night, 清晨做好 晚餐享用
[05:48] or do it at night, overnight, for dinner the next day. 或是头天晚上做好 第二天喝
[06:06] I planted this for a laugh, right, I mean, 我种这棵小东西纯粹为了好玩
[06:08] it’s in a poxy old tin with hardly any soil. 找个破铁罐 装点土就行
[06:10] Basil plant, but it looks terrible now, 边上这是罗勒 数月严寒考验后
[06:13] because we’ve had a hard couple of months, 它们现在长势欠佳
[06:15] but I probably have taken 30 tomatoes off of this plant, right. 但我已从这株植物上采过约三十个番茄了

[06:24] And now this never gets anywhere near the kitchen or a plate, 这种番茄难登大雅之堂

[06:32] So, it just goes to show that you can, you know, tomatoes, 我只是向你们展示一下

[06:40] and I’m just chopping some tomatoes up sort of erratically. 随意切成小块

[06:51] I’ve got a little colander in there, 准备一个沥水篮

[06:56] These bigger tomatoes, I actually, I’m quite proud of in a way, 像这种大个番茄 我有一种令我
[07:01] in a culinary sense, and instead of cutting them up small, 非常自豪的烹饪技巧 那就是不要切成小块
[07:04] just go with it. Get rid of that. 而是去掉底部
[07:06] And then just nice little slices, bosh! 直接切成薄片 漂亮极了

[07:15] It’s an absolute beauty. So, in the colander again, 切完把它也放进篮子里
[07:19] and then all these different tomatoes. 继续处理其他的番茄
[07:21] Look at the colour of that, God, my Lord! 老天爷啊 这颜色太美妙了
[07:24] And this is sort of where the tomato recipes start because, 接下来的步骤是所有番茄美食的精髓
[07:27] you don’t have to do this, 你可以不这么做
[07:28] but some of the best tomato salads i’ve ever eaten 但我吃过的最棒的番茄沙拉
[07:30] have been started this way. 都是从此步骤开始的
[07:33] This is how you do it. You get your colander like this, it still… 你要做的就是端起沥水篮
[07:40] and you get some salt and you season it. 加点盐帮助去除水分
[07:45] And then, you shake it up, put more salt. 翻两下 再放点盐
[07:51] So you just toss it up in the salt. 再颠两下 使之混合均匀
[07:54] You can see already the salt’s drawing the moisture out, 在盐的作用下 水分已经开始渗透出来
[07:56] so you get a more concentrated so a lovely tomatoey flavour. 你就可以得到更加浓郁的美味番茄
[08:00] So 15 minutes of draining like that 像这样控十五分钟水以后
[08:02] and I’m gonna make a whole load of lovely dishes. 我要用它来做几道饕餮大餐
[08:18] Right, so I’ve got the lovely tomatoes here that have been salted, 这些可爱的番茄已经腌好了
[08:20] and you can see water’s still coming out. 你可以看到仍有水滴出来
[08:22] You’ve got a puddle here, and if you taste it, 如果你尝一下渗出的这些水
[08:24] that’s salty water, salty tomato water. 你会发现它是番茄味的盐水
[08:27] So, that now, you got beautiful, lovely, 把这些鲜嫩欲滴
[08:30] seasoned, concentrated flavour tomato. 腌制入味的番茄
[08:32] I’ll want to get it into a nice big bowl. 倒进一个漂亮的大碗里
[08:34] And what I want to show you the mother recipe of tomato salads. 我要做的是妈妈味经典番茄沙拉
[08:39] And I want to show you a few recipes off of that, 以及由此衍生的几种做法
[08:42] I’ve got a few little tricks up my sleeve. 我要露几手绝活
[08:43] So the first thing I’ll add to the tomatoes once I’ve salted it, 首先要往腌番茄中加入
[08:47] right, is dried oregano. 干牛至[唇形科牛至属植物]
[08:48] Dried oregano is actually the king of dried herbs, 干牛至是名副其实的佐料之王
[08:51] and what I do is just give it a little scrunch 只要轻轻揉捏几下
[08:55] and let it all fall in there. 让碎末掉进碗里
[08:56] So a nice little tablespoon of oregano. 只需大约一小汤匙的量
[09:00] And then you want nice extra virgin olive oil, 接着加点特级初榨橄榄油
[09:04] enough to sort of coat the tomatoes, and then vinegar. 盖满番茄即可 然后放醋
[09:08] Red wine vinegar, white wine vinegar, 红葡萄酒醋还有白葡萄酒醋
[09:10] you know, treat it like a salad dressing, 把它们当做沙拉调味汁
[09:11] so one part vinegar to three, four parts oil, 醋与油的比例是一比三或一比四
[09:14] right, so a little splash of that. 撒上少许醋
[09:16] Another one of the flavourings which just really works is chilli, 另一种效果奇佳的调味品是辣椒
[09:19] so what I want to do is cut this chilli in half length-wise, 把辣椒纵向切开
[09:24] like that, and then these seeds in here 就像这样 瞧里面的籽
[09:26] you can just scrape the seeds out. 把它们刮干净
[09:28] All the really aggressive heat and flavour is in the seeds, 呛人的辣味都来自辣椒籽
[09:32] so by getting rid of ’em, 所以要剔掉它们
[09:34] you’ll just get that lovely sort of fruitiness out of the chillies. 只留下果味的辣椒外皮就行
[09:39] And then I just…chop this up. 然后把辣椒切碎
[09:46] I want to finely chop these chillies. 切得碎一些
[09:53] Right, so I’m just gonna save a little bit of this here. 留一点放在旁边
[09:56] Get some chilli into the tomatoes like that. 剩下的加入番茄中
[10:01] And then garlic, 然后是大蒜
[10:03] literally, there’s about ten portions of tomatoes there. 事实上 这些番茄有十人份
[10:06] One clove of garlic will do. 只需一瓣蒜就够了
[10:08] Raw garlic is pretty potent stuff, 生蒜的味道相当霸道
[10:09] so just on a grater, I’m just gonna grate it through like that, 把它放在擦菜板上 像这样来回擦
[10:14] and that way you don’t end up with 这样就不会
[10:15] a big old chunk of garlic in your mouth, 吃到大块的蒜了
[10:16] which ain’t all that pleasant for anyone. 因此不会受到蒜味困扰
[10:19] And just push that garlic onto there like that. 把蒜泥加进去
[10:24] I’m gonna put some pasta in now. I’ve got some fusilli, right. 接下来是意面 我准备了螺丝粉
[10:27] You could use penne, you could use spaghetti, linguini, 也可以用通心粉 意式细面或是扁面条
[10:29] and bosh a load in there, 把面倒进锅中
[10:34] with a little pinch of salt. 加适量的盐
[10:38] That’ll take about six minutes to cook, 大约要煮六分钟
[10:40] so I’ve got to pull my finger out 我要利用这段时间做点别的
[10:41] and get this tomato salad 在意面煮好之前
[10:42] and a couple of other bits together before that’s ready. 把番茄和调味料充分混合
[10:45] Give it a nice old toss up. 向上翻腾几下
[10:48] Absolutely beautiful. 真是美不胜收
[10:50] You’ve got all those different shapes, sizes, colours, I mean, 形状大小千奇百怪 颜色缤纷多彩
[10:52] you know, where do you start looking? 看得我眼花缭乱
[10:54] And at the bottom, you get this whole load of beautiful juice as well. 碗底还有好多诱人的果汁
[10:58] So the way I like to do this, 下一步是我最喜欢的摆盘
[11:02] I don’t want to muck about with this salad, 我可不想搞砸这盘沙拉
[11:03] I want to be really confident about it. 我对摆盘很有信心
[11:05] And first of all, I’m gonna get these lovely big beef tomatoes. 首先是这些可爱的大块牛番茄
[11:09] You know, get your orange ones, 把橙色和黄色的番茄片
[11:11] yellow ones, 摞在一起
[11:12] and then I’m gonna get some of these lovely smaller ones, 再放上可爱的小番茄
[11:16] shake ’em over the top and let them fall off. 从上面倒下去 让它们自然滑落
[11:18] And then I’ve got some nice balls of milky buffalo mozzarella. 我准备了马苏里拉水牛奶酪球
[11:22] Get three of them, bosh, bosh, bosh! 拿出三个 摆在上面
[11:24] It kind of looks like beautiful chaos, you know. 有一种杂乱无章的美
[11:27] That juice is gold. 再浇上金色的汤汁
[11:30] Just click off some nice little basil leaves 摘下几小片罗勒叶
[11:33] and just let them land. 撒在番茄上
[11:35] I can’t help myself but just to put a good lug of olive oil, 我等不及要开动了 但还要加点橄榄油
[11:40] and then that little bit of chilli here. 放上一点辣椒末
[11:42] For me, that is a death row meal. 这道菜肴足以让我欲仙欲死
[11:45] If I could have the last meal, 如果我只剩最后的晚餐
[11:46] as long as there’s plenty of chilli on that mozzarella, 只要马苏里拉奶酪上有足够多的辣椒
[11:48] I’m up for that. 我情愿为它而亡
[11:51] So, in here I’ve still got a big old load of my tomato salad. 眼前我还有一大碗
[11:56] So, from this tomato salad mothership recipe, 母亲秘制番茄沙拉
[11:59] what I want to do now is a little salsa. 我要来做点调味汁
[12:03] So what I’m gonna do is to take a whole load 拿出一部分番茄
[12:04] of these tomatoes out onto the board, 放到菜板上
[12:07] and literally, 实际上
[12:08] because we’ve flavoured them this beautiful way, 它们已经调好味了
[12:10] i just wanna start chopping them up. 我只要直接切碎就行
[12:14] Chop up like this. 就像这样来回切
[12:16] You know, and you only have to give it some of that, 我们需要的量不多
[12:21] and maybe you can hit it with a nice wadge of coriander. 可以再加些香菜提味
[12:27] Rip off a nice bunch and get that in with the tomatoes. 揪一小撮加到番茄里
[12:31] And just chop it up, chop it together, 把它们全部剁碎
[12:33] really, really lovely way to do it. 真是令人心情愉悦
[12:35] And you have a little taste. 小尝一下
[12:38] It’s amazing, right. 味道好极了
[12:40] A little bit of coriander in there and you could put a bit of mint, 除了香菜 你还可以加几片薄荷叶
[12:42] and, wow, it completely changes 味道就会截然不同
[12:45] into something different but delicious. 但依然美味
[12:48] Just pour that into the bowl. 把它们盛进碗里
[12:51] And what I’ll do with that 我要做的是
[12:53] is just give it a nice squeeze of lemon juice. 挤点柠檬汁进去
[12:55] And that, over a nice bit of you know grilled fish, grilled salt fish, tuna, 再搭配盐煎鱼 金枪鱼之类菜肴
[13:00] and the middle of the table with a lovely roasted chicken – beautiful. 桌中间再摆只烤鸡 太完美了
[13:05] And then this pasta here now, 再看看意大利面
[13:09] right… 差不多了
[13:11] What I want to do is drain it once it’s cooked. 把意面拿出来沥干水
[13:13] Right, just let it sit there for a little bit. 静置一会
[13:15] And in this bowl here, 这个大碗里
[13:18] I’ve still got some of this tomato salad left. 还剩了一些番茄沙拉
[13:20] What I want to do is getting my hands in, 我要用手
[13:23] scrunch it up, 揉碎它们
[13:24] And, again, what I’m trying to say to you 再次强调一下
[13:25] is this way that we’ve treated the tomato salad, 这种制作番茄沙拉的手法
[13:28] is absolutely so applicable for a summer pasta. 最适用于制作夏日意面
[13:32] Now that this pasta’s sort of dried off a fair bit 现在意面中的水份差不多沥干了
[13:36] and it’s so dry but roasting hot. 很干爽而且冒着热气
[13:38] Toss that in here and toss it about. 把它倒入碗中 上下翻滚
[13:43] And the heat from the pasta 带着余温的意大利面
[13:45] will carry on sort of sucking up all that lovely juice. 会吸收掉美味的沙拉汤汁
[13:48] And I have a little try. 我来尝一小口
[13:54] Really, really good. 味道真不错
[13:55] So I’m gonna put a little bit of fresh oregano here, 放一点鲜牛至叶
[13:57] some nice globe basil I’ll rip in there as well. 再撒点香水罗勒
[14:01] And I’m just gonna plate this… 然后装盘即可
[14:04] nice big spoonfuls on here. 盛上美美的一大勺
[14:06] Look at that, look at the colours. 瞧瞧 色泽多么亮丽
[14:08] Summertime written all over it. 夏日的缤纷融汇其中
[14:10] This is exactly the sort of food that I love. 这正是我爱吃的食物
[14:14] So, just finish this lovely pasta 这道美食的最后一道工序
[14:16] with some ripped up herbs over the top 就是撒上点香草碎
[14:18] basil, marjoram, oregano, any of that family, 比如罗勒 马郁兰 牛至等香料
[14:21] and, you know, 你会发现
[14:22] three dishes from the same sort of 这三道菜都以番茄沙拉为基础
[14:26] basis of a tomato salad – delicious. 令人回味无穷
[14:37] It’s funny, as you walk down here, Bri. 布莱 在这散步蛮有趣的
[14:39] You go through this green, green, green 当你穿梭于这片绿海当中
[14:41] and then you get these little hints of colour. 寻找万绿丛中的那一点红
[14:44] Actually it’s quite fun picking them, 采番茄真的非常有趣

[16:33] So I’m gonna do it in the wood oven, 我要用木烤箱做这道菜

[16:39] I want a sloosh of extra virgin, 加入大约几汤匙的

[16:46] Just lay this pancetta, or you could use smoky bacon, 把熏肉摆在烤盘上 也可以用熏培根

[16:52] And as soon as it’s kind of reasonably crisp and golden, 当它们变得金黄香脆的时候

[17:24] Now, herb-wise, flavour-wise, bay leaves, five or six of those, 准备好香料 香草叶 五到六片月桂叶

[17:37] So you can see all the lovely fat’s come out of this bacon, 从培根里榨出了飘香的培根油

[17:43] And what I want to do is just push the bacon to one side 先把培根拨到一边
[17:46] and then just click off 直接在油中
[17:48] a few of these lovely little leaves straight into the fat, 放入几片香草叶
[17:50] and they’ll start frying, and that’ll flavour the fat again. 叶子受热以后 香味会渗到油里
[17:53] That’s what we want, flavour in the fat. 我们想要的正是带着香料味的油
[17:55] Six or so bay leaves, 再放大概六片月桂叶
[17:58] oregano off the stick and then rosemary. 还有牛至叶和迷迭香
[18:01] You can go pretty generous on the rosemary. 迷迭香可以多放点
[18:03] Rosemary and pork, rosemary sausages, 迷迭香猪肉 迷迭香香肠
[18:05] rosemary tomatoes… 迷迭香番茄…
[18:07] God, it works really, really well. 迷迭香真是百搭
[18:10] So, next, the bacon back in. 接下来 把培根拨回来
[18:15] And then I want to get these tomatoes, 然后把这些番茄
[18:18] sit them on top of the oil. 直接摆在油上
[18:20] And obviously, 显然
[18:21] the bases of those tomatoes are exposed and have the core taken out. 番茄底部是暴露出来的 蒂已经去掉
[18:25] So that’s a brilliant journey for the juices to sort of cook out off, 这样可以很好地让果汁溢出来
[18:29] leaving you with a lovely tomato so keeping reasonably whole. 又不会破坏番茄的完整形状

[18:37] Look, that fills it right up. Brilliant. 瞧 刚好填满 棒极了
[18:39] Once we’ve done that, this can go straight back in the oven 这样就可以直接放回烤炉了
[18:44] just to sort of blister the tomatoes. 好让番茄外皮受热鼓起
[18:47] Now I’ve got these lovely sausages here, 我准备了一些美味的香肠
[18:49] and just get a little bit of olive oil 撒上点橄榄油
[18:52] and just rub it all round your sausage. Lovely. 让香肠充分沾上油 太爽了
[18:55] So, I can hear by now the tomatoes have had a fair bit of action. 我能听到番茄们已经有点小动作了
[19:01] Three, four minutes in this oven. 在这种烤炉中 三 四分钟足够
[19:04] Maybe five in your normal conventional oven. 传统烤箱可能需要五分钟
[19:07] But what I want to do now, 下一道工序是剥皮
[19:08] You can let them cool down a bit if you want or use some tongs, 你可以用钳子 或者让它冷却一下
[19:10] but I like to just sort of pinch off the skins. 不过我喜欢直接用手揭掉外皮

[19:16] And that’s the thing about this dish. 这道菜就是这么简单

[19:20] but it will be brilliant, it will be a little show-stopper. 但它真的很美味 令人赞不绝口
[19:23] But you do have to buy good sausages 前提是你得选购品质好的香肠
[19:25] and you do have to pull your finger out and have a sniff around the market, 费些功夫 在市场里好好寻觅一番
[19:27] get yourself some good, ripe tomatoes. 再选购一些新鲜成熟的番茄
[19:30] And any ones you can’t get off, don’t worry about it, 如果有一些皮剥不下来 别担心
[19:33] cuz you can pick them off the stew at the end. 你可以等到最后煨完的时候
[19:35] It’s just to get the worst of them off really. 把脱落的外皮剔掉就好了
[19:36] And then just, with a spoon, 然后 用勺子
[19:39] just mix it up. 把它们搅拌均匀
[19:40] Try not to break the tomatoes up. 尽量别把番茄弄烂
[19:43] I don’t want, you know, I’m not making a tomato sauce, that’s not interesting, 我不是在做番茄酱 那样很无趣
[19:46] I want to do a roast tomato sauce, and that’s different. 我要做一道不同寻常的烤番茄肉酱
[19:48] I want to keep the size, I want to keep the chunkiness. 我要保持它的外形和果肉的厚实感
[19:51] You know the lovely fat from the bacon, the herbs, 香喷喷的培根油混合着各式香草
[19:53] the different, more robust herbs, 气味相得益彰
[19:55] and then these sausages, which have been tossed in the oil, 然后把这些抹好橄榄油的香肠
[19:59] just can be dangled in and around, 随意的盘在烤盘里
[20:02] and you want to just push them in between your tomatoes. 再把它们压到番茄中
[20:06] So they’re all gonna cooked together. 最后一起放入烤炉
[20:08] All I want to do is get a little bit of garlic. 还要再加一点大蒜
[20:11] I’m not gonna peel them, 不用剥皮
[20:12] I’m just gonna put them in and around. 把它们掰开 随处放一些
[20:14] That will flavour the sauce a little bit. 它会给酱汁增添一点味道
[20:16] But we’ll squeeze all that lovely sweet garlic out. 千万记住不能用糖蒜
[20:20] And that’s it. Little drizzle of olive oil 差不多了 再来几滴橄榄油
[20:23] and then a little seasoning with some salt and pepper. 用盐和胡椒调味
[20:30] The best bit of the dish now is the slow cooking. 这道菜最好用文火慢烤
[20:32] So I’m gonna put that in at about 180 Celsius, about 350 Fahrenheit, 温度大约在180摄氏度 即华氏350度
[20:36] and I’ll turn the sausages maybe once or twice in that time, 中途可能要给香肠翻一到两次面
[20:40] and it’ll be delish. 这道菜势必美味无敌
[21:00] Look at this. Come on! Fantastic. 快看啊 新鲜出炉的美味大餐
[21:04] And if you imagine being that sausage, right, 试想一下这些香肠
[21:06] roasting on top, 上面有炭火烘烤
[21:08] and underneath all the tomatoes and herbs are cooking into the sausage. 下面有番茄和香草味道逐渐融入其中

[21:15] We definitely need something 这道菜要搭配主食

[21:18] It could be polenta, it could be rice, 可以是玉米糊 米饭
[21:20] it could be really chunky pasta, 或是嚼劲十足的意面
[21:22] and chop the sausage up and toss it all up. 把香肠切碎 拌在一起就行
[21:24] But I think this – get a nice bit of bread. 要我说的话 取一块面包
[21:30] Cut it up like that. 切下一大块
[21:32] Give it a nice rip up. 撕成两半
[21:35] And then get the lovely tomatoes 把美味的西红柿
[21:40] in on top of that bread like that. 像这样放在面包上
[21:44] Get a few nice sausages, look at that, 再加点香肠 瞧瞧
[21:46] all the juice at the bottom. 汤汁汩汩地流到盘底
[21:47] To finish it, a little bit of balsamic vinegar, 最后再来点意大利香醋
[21:51] just a few little drips around the sauce 稍微几滴就够了
[21:53] and that is just gonna mix in a real treat. 这绝对是招待客人的美味佳肴
[21:56] But that is a cracker, absolute cracker. 名副其实的饕餮盛宴
[22:16] This is nice and chilled. 冰凉清透的靓汤来也
[22:17] This has had about six hours. 番茄浓浆已经滤了六个小时
[22:19] Still dripping away, so you could have another three hours out of it, 现在还在滴呢 可以再滴三个小时
[22:22] but just put that there for the moment. 先把滤渣搁在一边
[22:25] I want to show you this right now, and you’ve got to forgive me 这不是我喜欢的菜系 但当你看到这道
[22:27] for how pretty it looks because it’s not really my normal style. 色泽美丽的靓汤时 你就能理解我的
[22:30] But this is an incredible dish, it is the easiest thing to do. 它的味道令人惊艳 做法又相当简单
[22:35] A brilliant way to use tomatoes and big them up, 这是一种绝妙的番茄吃法
[22:37] and it’s the pure, it’s the pure essence of tomatoes. 甚至可以说这道汤是番茄最精华的味道
[22:39] It smells like it, it tastes like it, absolutely beautiful. 闻起来 尝起来都相当美味
[22:43] So ice cube in there to keep it cold, a few little bits of basil. 冰镇一下 再加点罗勒
[22:48] Nice little delicate ones is what you want, 如果你喜欢 可以做得精美些
[22:50] you know, a couple of little basil flowers, if you like. 如果你喜欢 可以放点罗勒花
[22:54] And then celery, you know, on the Bloody Mary theme, 为了体现血腥玛丽主题
[22:57] some nice yellow celery leaves just flicked in there, 再加几片黄色的芹菜叶
[23:00] and then a drizzle of nice extra virgin olive oil, 来几滴特级初榨橄榄油
[23:04] and that is top stuff, absolutely top stuff. 这样一来 品质绝对一流
[23:08] And you just sort of give it a nice little slurp. 小啜一口
[23:14] It’s so good, so good. It’s so good. 太好喝了
[23:17] Tell you what I’m gonna do, 我现在打算
[23:19] I’m gonna go and take Brian a little glass of this, 我要给布莱恩盛上一小杯
[23:25] see if he can tell what it is. 看他能不能尝出这是什么
