[02:58] | So just zest about half an orange, | 削约半个橙子皮 |
[03:01] | five or six swipes into there, | 拍到碗里 |

[08:38] | So I’ve got this guinea fowl here, and literally all you do | 这只珍珠鸡 |

[09:19] | Now, I want to do some basic seasoning here. | 先做一些基础调味 |
[09:21] | So rosemary in each, | 往每只鸟里放上迷迭香 |
[09:24] | little bits of rosemary just in the cavity, | 塞进内腔 |
[09:26] | and you can put bits of orange zest in there, | 还可以放点橙皮 |
[09:28] | bits of lemon zest in there, bits of garlic, | 柠檬皮 少许大蒜 |
[09:31] | you know, a little bit of thyme. It’s all flavour. | 再来点百里香 都可以增添风味 |
[09:32] | It’s all gonna steam inside there while it’s roasting | 烧烤时香料都会蒸进去 |
[09:35] | and it’s gonna do nothing other than improve the flavour. | 使烤肉更美味 |
[09:38] | So, what I want to do now is get these birds in here. | 把鸟肉放过来 |
[09:40] | Look how lovely they look. | 看起来真棒 |
[09:42] | And then what I want to do | 现在我要 |
[09:43] | is just get some basic flavours happening. | 做一些基础调味 |
[09:45] | I’ve got this sausage here | 加入一些香肠 |
[09:47] | with nice chunky bits of herb in there and fat and meat. | 撒上些香草 |
[09:50] | Bay leaves, lovely nice flavour. | 月桂叶的味道很妙 |
[09:52] | Bay’s brilliant with game, I think, really, really nice. | 很适合烤野味 |
[09:55] | Lots of rosemary, get some nice big splits in and around, | 大量迷迭香撕成片 |
[10:00] | get it all in there. | 全放进去 |
[10:01] | Then season it with pepper, | 加入胡椒和 |
[10:04] | a really good seasoning with sea salt. | 调味圣品海盐 |

[10:18] | and you’ll get a lovely mixture of fats. When it comes to basting, | 融成脂肪混合物 |

[10:23] | So, get your hands in here now, rub the seasoning and the herbs | 用手涂匀调味料和香草 |

[10:33] | So we’re gonna cook this for about an hour, hour and a half | 大约烤一个半小时 |

[10:53] | Now, what I’m gonna serve with that, | 同时我还要做 |

[10:59] | So I’ve got two litres of water boiling here. | 两公升水煮沸 |
[11:03] | I’m gonna add 500 grams of polenta. | 倒入500克玉米粉 |
[11:05] | You can buy it everywhere and it’s a form of | 到处可以买到 |
[11:07] | dried and milled corn, essentially, | 实际上是风干磨碎的玉米粉 |
[11:10] | classically from the north of Italy. | 意大利北部的经典口味 |
[11:12] | Get a whisk or a spoon and just whisk that in. | 用搅拌器或汤匙搅匀 |
[11:16] | So, as soon as you put that polenta in, if you see | 玉米粉放入后 |
[11:19] | you give it a little whisk | 搅拌几下 |
[11:20] | and it’ll start going thick straight away. | 立刻变得粘稠了 |
[11:22] | Now we wanna keep it on a low heat. | 保持低温加热 |

[11:35] | And then the roast birds, just give them some love. | 烤小鸟要多注意 |

[12:15] | Now, you’ve got all that lovely veg here in the bottom, | 烤盘底部的蔬菜 |

[12:22] | We put that straight onto the charcoal. | 直接放到木炭上 |

[12:27] | and then we add a couple of glasses | 然后加入 |
[12:30] | of reasonably half-decent Chianti, nothing too expensive. | 几小杯勤地酒 不算贵 |
[12:34] | I just want the bare stickiness at the bottom | 没过底部就好 |
[12:36] | to boil with the initial freshness of the onions | 和新鲜的洋葱 |

[13:21] | So what I’m gonna do is add some butter and I want to add about three ounces of butter | 加约三盎司黄油 |
[13:26] | and then just beat that in, and all of a sudden, it’s loosening. | 搅拌开 玉米糊就 |
[13:30] | It’s loosening and it’s melting and it’s, you know, | 软化下来 变得松散 |

[13:37] | Then we need to season it with salt, | 加入些盐调味 |
[13:40] | right, but not too much salt because | 但别放太多 |
[13:42] | I want a massive handful of Parmesan, and a real big one, like that | 因为还要加一大把意大利干酪 像这样 |

[13:50] | Literally beat that in, | 充分搅拌开 |
[13:53] | and that’s pretty much perfect. Now, | 已经很完美了 |
