[01:01] | You know, we don’t get them when they’re beautifully ripe on the tree. | 我们现在吃不到自然成熟的番茄 |

[01:06] | in whatever size garden you’ve got, if you grow ’em yourself. | 你都能收获到成熟的番茄 |
[01:08] | So I’m gonna pick everything I can get my hands on | 我要把园子里的番茄都采回去 |
[01:11] | and then we’ll have a little cook-up. | 然后来做点好吃的 |
[01:29] | So, what I’m gonna make is, like, | 我要做的是一道 |
[01:31] | a clear, refreshing summer tomato consomme. | 冰爽提神的夏日番茄清汤 |
[01:34] | And I… I hate to say the word “consomme”, | 我讨厌说”清汤”这个词 |
[01:37] | because it reminds me of when I was trained, | 这让我想起受训的那段时光 |
[01:39] | and I had to make consomme God knows how many times. | 天知道我炖了多少次清汤 |
[01:42] | It’s quite, it’s quite a pretty sort of posh restaurant affair. | 这道菜算是高档餐厅的菜品 |
[01:48] | And normally, like, I’m not really into that, | 通常我对这类菜品并不感冒 |
[01:50] | I’m into sort of home cooking. | 我更青睐家常菜 |
[01:51] | But this, as a starter in the summer when it’s hot, | 但作为盛夏时分的开胃小点 |
[01:55] | is just like a slap round the face, gets your taste buds going, | 这例汤如同一记耳光 唤醒你的味蕾 |
[01:58] | ready for a lovely proper meal afterwards, | 为随后的美味正餐做好铺垫 |
[02:01] | but it’s so quick to do that I don’t mind it. | 这道菜做法简单 我就现场演示一番 |
[02:04] | What I want to do is get these tomatoes, about two kilos, | 首先把大约两公斤的番茄 |

[02:08] | I’m not gonna put quite all of them in there, | 我不会全放进去 |
[02:09] | because I’ve done it before | 因为我以前试过 |
[02:12] | and so it fills quite high to the top, | 番茄汁差点溢出来 |
[02:13] | and then I want some vodka. | 然后加一些伏特加酒 |
[02:14] | Now, the inspiration for this version is kind of like Bloody Mary, | 这种做法的灵感来源于血腥玛丽 |

[02:19] | which is obviously your tomatoes, your vodka, | 正如眼前这样 番茄 伏特加酒 |

[02:26] | Horseradish and tomatoes work really well together, | 它和番茄的味道特别搭 |

[02:29] | So I want a nice five centimetre bit, | 切下一段五厘米长的山葵 |
[02:34] | just sort of peeled, | 把皮削掉 |
[02:36] | or you can get little jars of the kind of pre-grated hot stuff, | 或者可以用事先磨好的罐装山葵 |
[02:39] | but not the stuff in cream, | 不要用奶油状的 |
[02:41] | just the grated horseradish. | 用山葵碎末就行 |
[02:42] | And you can kind of get the skin off | 把皮丢掉 |

[02:51] | So, there you go, there’s your horseradish, in with the tomatoes, | 然后把山葵块跟番茄放到一起 |

[03:47] | Now, you can get muslin in good kitchen shops, | 好点的厨具店都能买到棉布 |
[03:50] | you know, those household shops do it. | 家用商品店也有卖的 |
[03:53] | And also if you go to your butcher, | 肉店里也能见到 |
[03:54] | they use muslin to wrap the big joints of meat in | 肉贩用棉布包着一大块肉 |
[03:57] | and, you know, especially if you’re a young lady, | 如果你是一位年轻小姐 |
[03:59] | you can chat up the butcher, ask him for a free bit of muslin, | 可以和肉贩搭讪 向他要块棉布 |

[05:16] | Now, you can see this colour here is a little bit bland. | 你会发现汤汁颜色有点苍白 |

[05:22] | is just get a nice little slice of beetroot. | 切下一小片甜菜头 |
[05:26] | So I’m just gonna plop this in here. | 把它丢进汤里 |

[05:33] | You can almost see the colour coming out of that beetroot already. | 你会发现甜菜的颜色已经渗了出来 |

[06:13] | because we’ve had a hard couple of months, | 它们现在长势欠佳 |
[06:15] | but I probably have taken 30 tomatoes off of this plant, right. | 但我已从这株植物上采过约三十个番茄了 |

[06:24] | And now this never gets anywhere near the kitchen or a plate, | 这种番茄难登大雅之堂 |

[06:32] | So, it just goes to show that you can, you know, tomatoes, | 我只是向你们展示一下 |

[06:40] | and I’m just chopping some tomatoes up sort of erratically. | 随意切成小块 |
[06:44] | If there’s any dodgy bits like that, and you get it sometimes, | 若是碰到这种坏掉的地方 |

[06:51] | I’ve got a little colander in there, | 准备一个沥水篮 |

[06:56] | These bigger tomatoes, I actually, I’m quite proud of in a way, | 像这种大个番茄 我有一种令我 |

[07:15] | It’s an absolute beauty. So, in the colander again, | 切完把它也放进篮子里 |
[07:19] | and then all these different tomatoes. | 继续处理其他的番茄 |
[07:21] | Look at the colour of that, God, my Lord! | 老天爷啊 这颜色太美妙了 |
[07:24] | And this is sort of where the tomato recipes start because, | 接下来的步骤是所有番茄美食的精髓 |
[07:27] | you don’t have to do this, | 你可以不这么做 |
[07:28] | but some of the best tomato salads i’ve ever eaten | 但我吃过的最棒的番茄沙拉 |
[07:30] | have been started this way. | 都是从此步骤开始的 |
[07:33] | This is how you do it. You get your colander like this, it still… | 你要做的就是端起沥水篮 |
[07:40] | and you get some salt and you season it. | 加点盐帮助去除水分 |
[07:45] | And then, you shake it up, put more salt. | 翻两下 再放点盐 |
[07:51] | So you just toss it up in the salt. | 再颠两下 使之混合均匀 |
[07:54] | You can see already the salt’s drawing the moisture out, | 在盐的作用下 水分已经开始渗透出来 |
[07:56] | so you get a more concentrated so a lovely tomatoey flavour. | 你就可以得到更加浓郁的美味番茄 |
[08:00] | So 15 minutes of draining like that | 像这样控十五分钟水以后 |
[08:02] | and I’m gonna make a whole load of lovely dishes. | 我要用它来做几道饕餮大餐 |
[08:18] | Right, so I’ve got the lovely tomatoes here that have been salted, | 这些可爱的番茄已经腌好了 |
[08:20] | and you can see water’s still coming out. | 你可以看到仍有水滴出来 |
[08:22] | You’ve got a puddle here, and if you taste it, | 如果你尝一下渗出的这些水 |
[08:24] | that’s salty water, salty tomato water. | 你会发现它是番茄味的盐水 |
[08:27] | So, that now, you got beautiful, lovely, | 把这些鲜嫩欲滴 |
[08:30] | seasoned, concentrated flavour tomato. | 腌制入味的番茄 |
[08:32] | I’ll want to get it into a nice big bowl. | 倒进一个漂亮的大碗里 |
[08:34] | And what I want to show you the mother recipe of tomato salads. | 我要做的是妈妈味经典番茄沙拉 |
[08:39] | And I want to show you a few recipes off of that, | 以及由此衍生的几种做法 |
[08:42] | I’ve got a few little tricks up my sleeve. | 我要露几手绝活 |
[08:43] | So the first thing I’ll add to the tomatoes once I’ve salted it, | 首先要往腌番茄中加入 |
[08:47] | right, is dried oregano. | 干牛至[唇形科牛至属植物] |
[08:48] | Dried oregano is actually the king of dried herbs, | 干牛至是名副其实的佐料之王 |
[08:51] | and what I do is just give it a little scrunch | 只要轻轻揉捏几下 |
[08:55] | and let it all fall in there. | 让碎末掉进碗里 |
[08:56] | So a nice little tablespoon of oregano. | 只需大约一小汤匙的量 |
[09:00] | And then you want nice extra virgin olive oil, | 接着加点特级初榨橄榄油 |
[09:04] | enough to sort of coat the tomatoes, and then vinegar. | 盖满番茄即可 然后放醋 |
[09:08] | Red wine vinegar, white wine vinegar, | 红葡萄酒醋还有白葡萄酒醋 |
[09:10] | you know, treat it like a salad dressing, | 把它们当做沙拉调味汁 |
[09:11] | so one part vinegar to three, four parts oil, | 醋与油的比例是一比三或一比四 |
[09:14] | right, so a little splash of that. | 撒上少许醋 |
[09:16] | Another one of the flavourings which just really works is chilli, | 另一种效果奇佳的调味品是辣椒 |
[09:19] | so what I want to do is cut this chilli in half length-wise, | 把辣椒纵向切开 |
[09:24] | like that, and then these seeds in here | 就像这样 瞧里面的籽 |
[09:26] | you can just scrape the seeds out. | 把它们刮干净 |
[09:28] | All the really aggressive heat and flavour is in the seeds, | 呛人的辣味都来自辣椒籽 |
[09:32] | so by getting rid of ’em, | 所以要剔掉它们 |
[09:34] | you’ll just get that lovely sort of fruitiness out of the chillies. | 只留下果味的辣椒外皮就行 |
[09:39] | And then I just…chop this up. | 然后把辣椒切碎 |
[09:46] | I want to finely chop these chillies. | 切得碎一些 |
[09:53] | Right, so I’m just gonna save a little bit of this here. | 留一点放在旁边 |
[09:56] | Get some chilli into the tomatoes like that. | 剩下的加入番茄中 |
[10:01] | And then garlic, | 然后是大蒜 |
[10:03] | literally, there’s about ten portions of tomatoes there. | 事实上 这些番茄有十人份 |
[10:06] | One clove of garlic will do. | 只需一瓣蒜就够了 |
[10:08] | Raw garlic is pretty potent stuff, | 生蒜的味道相当霸道 |
[10:09] | so just on a grater, I’m just gonna grate it through like that, | 把它放在擦菜板上 像这样来回擦 |
[10:14] | and that way you don’t end up with | 这样就不会 |
[10:15] | a big old chunk of garlic in your mouth, | 吃到大块的蒜了 |
[10:16] | which ain’t all that pleasant for anyone. | 因此不会受到蒜味困扰 |
[10:19] | And just push that garlic onto there like that. | 把蒜泥加进去 |
[10:24] | I’m gonna put some pasta in now. I’ve got some fusilli, right. | 接下来是意面 我准备了螺丝粉 |
[10:27] | You could use penne, you could use spaghetti, linguini, | 也可以用通心粉 意式细面或是扁面条 |
[10:29] | and bosh a load in there, | 把面倒进锅中 |
[10:34] | with a little pinch of salt. | 加适量的盐 |
[10:38] | That’ll take about six minutes to cook, | 大约要煮六分钟 |
[10:40] | so I’ve got to pull my finger out | 我要利用这段时间做点别的 |
[10:41] | and get this tomato salad | 在意面煮好之前 |
[10:42] | and a couple of other bits together before that’s ready. | 把番茄和调味料充分混合 |

[10:54] | And at the bottom, you get this whole load of beautiful juice as well. | 碗底还有好多诱人的果汁 |

[11:02] | I don’t want to muck about with this salad, | 我可不想搞砸这盘沙拉 |
[11:03] | I want to be really confident about it. | 我对摆盘很有信心 |
[11:05] | And first of all, I’m gonna get these lovely big beef tomatoes. | 首先是这些可爱的大块牛番茄 |
[11:09] | You know, get your orange ones, | 把橙色和黄色的番茄片 |
[11:11] | yellow ones, | 摞在一起 |
[11:12] | and then I’m gonna get some of these lovely smaller ones, | 再放上可爱的小番茄 |
[11:16] | shake ’em over the top and let them fall off. | 从上面倒下去 让它们自然滑落 |
[11:18] | And then I’ve got some nice balls of milky buffalo mozzarella. | 我准备了马苏里拉水牛奶酪球 |
[11:22] | Get three of them, bosh, bosh, bosh! | 拿出三个 摆在上面 |
[11:24] | It kind of looks like beautiful chaos, you know. | 有一种杂乱无章的美 |

[11:51] | So, in here I’ve still got a big old load of my tomato salad. | 眼前我还有一大碗 |
[11:56] | So, from this tomato salad mothership recipe, | 母亲秘制番茄沙拉 |
[11:59] | what I want to do now is a little salsa. | 我要来做点调味汁 |
[12:03] | So what I’m gonna do is to take a whole load | 拿出一部分番茄 |
[12:04] | of these tomatoes out onto the board, | 放到菜板上 |

[12:08] | because we’ve flavoured them this beautiful way, | 它们已经调好味了 |
[12:10] | i just wanna start chopping them up. | 我只要直接切碎就行 |

[12:16] | You know, and you only have to give it some of that, | 我们需要的量不多 |
[12:21] | and maybe you can hit it with a nice wadge of coriander. | 可以再加些香菜提味 |
[12:27] | Rip off a nice bunch and get that in with the tomatoes. | 揪一小撮加到番茄里 |
[12:31] | And just chop it up, chop it together, | 把它们全部剁碎 |
[12:33] | really, really lovely way to do it. | 真是令人心情愉悦 |
[12:35] | And you have a little taste. | 小尝一下 |

[12:40] | A little bit of coriander in there and you could put a bit of mint, | 除了香菜 你还可以加几片薄荷叶 |

[12:53] | is just give it a nice squeeze of lemon juice. | 挤点柠檬汁进去 |
[12:55] | And that, over a nice bit of you know grilled fish, grilled salt fish, tuna, | 再搭配盐煎鱼 金枪鱼之类菜肴 |
[13:00] | and the middle of the table with a lovely roasted chicken – beautiful. | 桌中间再摆只烤鸡 太完美了 |
[13:05] | And then this pasta here now, | 再看看意大利面 |

[13:11] | What I want to do is drain it once it’s cooked. | 把意面拿出来沥干水 |
[13:13] | Right, just let it sit there for a little bit. | 静置一会 |

[13:18] | I’ve still got some of this tomato salad left. | 还剩了一些番茄沙拉 |

[13:32] | Now that this pasta’s sort of dried off a fair bit | 现在意面中的水份差不多沥干了 |
