[02:00] | There’s a couple of vegetables that work incredibly well with it | 很多蔬菜做乳酪意面味道都很棒 |
[02:03] | and one of them is Mr. Courgette, | 其中之一就是西葫芦先生 |
[02:05] | and the other one is asparagus which is delish with it. | 还有芦笋 做出的意面非常可口 |
[02:08] | Have a look at this. | 瞧瞧这个 |
[02:09] | So I’ve got a nice thickly cut piece of pancetta | 我准备了几块厚腌肉片 |
[02:11] | or you could use your smoky bacon. | 你们也可以用熏肉代替 |
[02:13] | I’ve got five slices here. | 我准备了五块肉 |
[02:15] | I’m gonna do two portions, | 足够做两人份了 |

[02:44] | you could use spaghetti which is lovely with carbonara. | 意式细面做出来的也相当可口 |
[02:47] | I am told by the Italians, who I trust, | 但几个意大利行家告诉我 |
[02:50] | that penne is the classic, | 传统做法是用通心粉 |
[02:53] | so about 200 grams of penne there. | 加入约200克通心粉 |
[02:55] | Season it with some salt. | 放少许盐调味 |
[02:58] | Lid on top. Right, the penne’s on. Smoky bacon’s on. | 盖上盖子 现在通心粉和腌肉都下锅了 |
[03:02] | Give it a little toss every now and again | 不时翻炒一下腌肉 |
[03:03] | and already you can smell, it means business. | 闻闻 肉香四溢啊 真不是盖的 |
[03:07] | Get your lovely courgettes, | 现在来处理一下西葫芦 |
[03:08] | a couple of small courgettes per person. | 一份意面里要多放几个小西葫芦 |
[03:11] | Cut them in half first of all. | 先把它们对半切开 |
[03:13] | So if you look at these yellow ones, you know, | 看看这种黄颜色的西葫芦 |
[03:16] | there’s a fair old bit of seed in there. | 瓤里有很多熟了的西葫芦籽 |
[03:18] | I wanna cut them into quarters now. | 再把西葫芦切成四分之一份 |
[03:20] | And, you know, you can kind of do what you like really | 其实你愿意怎么切都行 |
[03:24] | but what I wanna try and do is | 但是我喜欢先把 |
[03:26] | just remove that fluffy bit of core | 软塌塌的西葫芦籽去掉 |
[03:28] | and slice the courgette at an angle into pieces of squash | 再按照一定角度把它切成小扁丁 |
[03:35] | that kind of look a bit like quills of penne. | 让它们看上去很像是一根根通心粉 |
[03:39] | Erm, and very often in good pasta dishes, | 烹调意面菜肴时 |
[03:41] | they do that so that the pasta | 人们常常这样做 |
[03:43] | and the sauce work well together. | 以便意面与酱料融合 |
[03:46] | And this is a great dish, cause you can get it cooked | 这道菜省时省力 因为煮通心粉的同时 |
[03:49] | in the time it takes you to cook the pasta, | 你就可以把西葫芦做好 |

[04:29] | The flavour that these courgettes | 西葫芦炒腌肉 |
[04:31] | are gonna take on is absolutely delish. | 味道好极了 |
[04:34] | So just give it a good old toss. | 翻炒几下即可 |
[04:38] | And then very important to this dish, | 下面要加入一大撮胡椒粉 |
[04:40] | a nice big pinch of pepper. | 这是这道菜的精髓所在 |
[04:43] | Right. That’s how at least I was taught by Italians, | 至少意大利朋友是这样教我的 |

[04:50] | Not just for seasoning but for a bit of heat as well. | 不仅为了提鲜 也为了增加香辛味道 |

[04:57] | Thyme loves courgettes, thyme also loves pork and bacon. | 百里香配西葫芦和腌肉是很好吃的 |

[05:20] | A little contorni, you know, steak and chips, | 可以用作配菜 搭配牛排和薯条 |

[05:33] | So, you know, what’s lovely is that clever way of | 这道菜的精髓就在于 |
[05:36] | getting the fat out of the bacon | 巧妙利用榨出的腌肉肥油 |
[05:38] | and putting the courgettes in and the herbs and pepper. | 再配以西葫芦 香草和胡椒 |
[05:40] | You can kind of use it lots of different ways. | 大家可以自由发挥 |
[05:42] | Now, the sauce is dead simple | 酱汁的调制非常简单 |
[05:45] | and this is where everyone gets the sauce completely wrong. Right? | 许多人都会把酱汁做得很复杂 |
[05:48] | For one person you want one egg yolk, | 一人份的话需要放一个蛋黄 |
[05:51] | so I’m doing two, so I’ll have two. | 我做的是两人份 所以要放两个蛋黄 |
[05:56] | So, I’ve got two egg yolks in there for two people. | 为做两人份的酱汁 我打好了两个蛋黄 |
[05:59] | You want a splash of cream, about 25 ml per person, | 还需要一些奶油 大约每人25毫升 |
[06:03] | 50 ml going in there. | 一共需要50毫升 |
[06:05] | A nice sort of handful like that of freshly-grated parmesan. | 抓上一把现磨好的意大利干酪 |
[06:09] | Don’t go using that pre-grated, horrible stuff. | 别用那些提前磨好的 很难吃 |
[06:11] | And I don’t think you need to put pepper in here, | 不用再放胡椒粉了 |

[06:15] | And I don’t think you need to season it | 而且也不用放盐调味 |
[06:17] | because you’ve got seasoned pasta water, | 煮意面的水里已经加过盐了 |

[06:22] | And this is where the true carbonara gets serious. Right? | 到了制作乳酪意面的关键阶段了 |
[06:27] | I know by now that those courgettes have softened | 现在西葫芦已经炖软了 |
[06:30] | but they’ve still got a bit of crunch to it. | 不过吃起来还是很爽脆可口 |
[06:33] | Drain your pasta. Straight in with the courgettes. | 把通心粉捞出来 倒入炒西葫芦中 |
[06:45] | What I wanna do now is just wait. You listen. | 现在让我们等一会儿 听听看 |
[06:48] | That frying sound. It’s too aggressive for the eggs, | 听见滋滋的油煎声了吧 油温太高了 |
[06:51] | it’ll end up like scrambled eggs. | 蛋黄酱汁放进去就会熟 |
[06:53] | The heat’s subsided and now you pour it in, | 现在冷却得差不多了 把酱汁倒入 |
[06:57] | and you toss it, toss it, toss it, toss it. | 不断翻炒 翻炒 翻炒 |

[07:01] | and get some of that pasta water in here. | 加入一些汤 |
[07:06] | And you want it to be silky, you want it to be smooth | 这样酱汁才能变得十分丝滑 均匀 |
[07:09] | and you want it to just perfectly cover the pasta. | 才能完全和通心粉融合在一起 |

[07:21] | Little bit of thyme over the top. | 撒上一点百里香 |

[08:10] | and as long as its got that nice dense flesh, | 只要它的瓜肉瓷实饱满 |
[08:13] | you can pretty much do what you like with it. | 你用它来做什么都行 |

[08:16] | this is pretty cool, super cool actually. | 这玩意简直神乎其神 |

[08:22] | and it’s just grown like the clappers and it’s grown up this, | 它就长成钟锤那么大了 而且还向上爬 |
[08:25] | you know, 8ft pergola. | 爬上这个近2.5米高的藤架 |
[08:28] | And if you look here, look at these. | 再看看这里 看这些藤蔓 |
[08:30] | I mean, if you think about bungee ropes | 简直像是蹦极用的橡皮带 |
[08:33] | and technology like suspension bridges, i mean, look at that! | 或是拉吊桥用的钢索 看它弹性多好 |
[08:38] | They’re really quite aggressive at climbing up things. | 它们十分擅长攀爬 |
[08:41] | I mean, if I stood here for too long, | 如果我一直站在这里不动 |
[08:42] | they’d probably climb up me! | 它们很可能会爬到我身上呢 |
[08:44] | So, what I say, it’s definitely worth having a experiment, | 所以说 有件事值得一试 |
[08:46] | just go and get a load of seeds, | 大家去买各种各样的种子 |
[08:48] | choose them by picture, don’t choose them by name, | 别管名字 觉得哪个照片好看就选哪个 |
[08:50] | and plant them up, eat your way around the garden | 然后种下 等成熟之后依次品尝 |

[08:54] | the ones you don’t, try something else next time. | 不喜欢吃的 下次就别买了 |

[08:57] | some of the ugliest squashes and courgettes are the tastiest. | 最难看的南瓜和西葫芦也许是最可口的 |
[09:14] | I’m gonna make a delicious raw courgette salad. | 下面教大家做一道可口的生西葫芦沙拉 |
[09:17] | First of all, I’m gonna serve it with some mackerel | 首先 我要处理的是鲭鱼 |
[09:19] | and mackerel, I think, is a really underrated fish, | 鲭鱼不怎么受青睐 |
[09:22] | very, very good for you, | 其实它对我们很有益处 |
[09:23] | and if you have a look at these, | 看看这几条 |
[09:25] | I got these today from a fishmonger’s. | 我今天刚从鱼贩子那里买来的 |
[09:28] | and as soon as I saw ’em, i knew I had to buy ’em. | 我一看到它们 就知道自己肯定会买 |
[09:30] | Look at the eyes. Look how lovely and clear they are. | 瞧瞧鱼的眼睛 多么清澈透明 |
[09:32] | Absolutely smells fresh as a daisy, like the seaside. | 味道如雏菊般清新 还带着海边的味道 |
[09:35] | Now, what I want to do is just give it a little score | 现在我要在鱼身上的两侧 |

[11:28] | So we’ve got some lovely courgettes, | 这里准备好了西葫芦 |
[11:30] | they’re all quite young and they’re all nice and crunchy, | 它们都还很嫩 脆生生的 |
[11:33] | and unless you’ve got brilliant knife skills, | 要是你没有出神入化的刀工 |
[11:36] | one of the best things to use is one of those little speed peelers | 最好还是用这种切片器 |
[11:38] | so you can just peel them in, like this. | 像这样一条一条地刮下去 |
[11:40] | And you’re gonna get | 这样就能得到 |
[11:41] | perfectly thin slithers of beautiful courgette. | 很多又细又滑的西葫芦片了 |
[11:45] | And as it gets hard to peel, just turn it around, | 刮起来不顺手的时候 就转动一下 |
[11:49] | and actually what you get left with | 这样最后剩下的 |

[12:38] | is because they’re so young and crunchy | 是因为它们很嫩 很脆 |

[12:43] | Brilliant shape, look like a bloomin’ alien. | 长相不俗 简直像从外星来的 |
[12:48] | It takes a little bit of time to rattle through these, | 处理好这些西葫芦要费些时间 |
[12:51] | but it’s a nice effect, quite unusual | 但效果很好 很特别 |
[12:53] | and it’s not every day you have a zucchini salad, | 要知道你不是每天都能吃到西葫芦沙拉的 |
[12:56] | so now is our job to make it taste delish. | 所以我们要把它做得美味一些 |
[12:58] | Now, as far as taste is concerned, | 说到美味 |
[13:01] | olive oil, extra virgin olive oil, good flavour, | 这种特级初榨橄榄油是很好的选择 |

[13:07] | nice squeeze a lemon, straight over there. | 将柠檬汁挤在上面 |

[13:33] | chilli, I think, just makes this work, | 加些辣椒味道会更好 |

[13:38] | Get rid of the seeds. | 去掉籽 |
[13:40] | Finely chop the chilli into like little flecks like that. | 像这样 把辣椒切成小碎丁 |
[13:51] | Sweep it up, get that in there. | 盛起来 放进盘里 |
[13:53] | And then just gonna mix it up with my fingertips, | 然后用手进行搅拌 |
[13:57] | and they almost feel silky, you know? | 手感嫩滑无比 |

[19:45] | or if you have to, just bust the side open | 如果花口紧闭 用拨开一个口 |

[19:53] | cos that’s a tiny bit bitter. | 因为雄蕊的味道有点苦 |

[22:09] | For this quantity, probably double this quantity, | 要调出裹这些的量 或两倍于它的量 |
[22:12] | I want about 200 grammes of self-raising flour. | 我需要称大约两百克的自发面粉 |
[22:16] | Self-raising flour is great, | 自发面粉很省事 |
[22:17] | because it’s got its raising agent in there already, | 因为它本身含有膨松剂 |

[23:19] | Now, if you’re not gonna use a proper deep fryer with a thermometer, | 如果你不打算用有温度计的油炸锅 |

[23:26] | soon as it gets golden brown, | 当土豆变成金黄色时 |
