[01:00] this is a perfect example of what can happen 如果你不及时采摘的话
[01:03] if you don’t stay on top of picking your courgettes. 就很可能出现这种情况

[01:08] I’ve got my diddy little ones, 又长着一丁点大的西葫芦
[01:10] and then I’ve got this blooming triffid here 还有这骇人的庞然大物

[01:15] And yes, you can still use them and cook them all, 这么大个的西葫芦依然可以食用
[01:17] but you konw, as they get bigger, they get a little bit more spongy 然而西葫芦越大 肉质越绵软
[01:19] and you’ve gotta be a little bit clever about how you cook it. 因此烹调时可要大费脑筋

[01:54] Now, I’m gonna do one of the all-time classic pasta dishes. 我要做的是经久不衰的意面菜肴
[01:58] I’m gonna do a carbonara, right. 一道乳酪意面
[02:00] There’s a couple of vegetables that work incredibly well with it 很多蔬菜做乳酪意面味道都很棒
[02:03] and one of them is Mr. Courgette, 其中之一就是西葫芦先生
[02:05] and the other one is asparagus which is delish with it. 还有芦笋 做出的意面非常可口
[02:08] Have a look at this. 瞧瞧这个
[02:09] So I’ve got a nice thickly cut piece of pancetta 我准备了几块厚腌肉片
[02:11] or you could use your smoky bacon. 你们也可以用熏肉代替
[02:13] I’ve got five slices here. 我准备了五块肉
[02:15] I’m gonna do two portions, 足够做两人份了
[02:16] two very generous portions, okay? 而且是分量很足的两人份
[02:18] I’m just gonna slice these up 现在我来把它们切丁
[02:20] and I want it to be quite chunky and quite rugged. 尽量切得大而厚 不用那么精细

[02:25] And this will be a brilliant beginning to this little story, 这算是个华丽的开场
[02:28] because I’m gonna put a little splash of olive oil in this pan. 现在 向锅里加入少许橄榄油
[02:32] I’ll get the heat on. 点上火
[02:34] And I want the fat to render out of 要把腌肉中的肥油
[02:36] this beautiful bacon straight away. 全部榨出来
[02:39] So while that’s doing that, let me put the pasta in. 同时 把意面下锅
[02:43] You could use linguini, 你可以用扁面条
[02:44] you could use spaghetti which is lovely with carbonara. 意式细面做出来的也相当可口
[02:47] I am told by the Italians, who I trust, 但几个意大利行家告诉我
[02:50] that penne is the classic, 传统做法是用通心粉
[02:53] so about 200 grams of penne there. 加入约200克通心粉
[02:55] Season it with some salt. 放少许盐调味
[02:58] Lid on top. Right, the penne’s on. Smoky bacon’s on. 盖上盖子 现在通心粉和腌肉都下锅了
[03:02] Give it a little toss every now and again 不时翻炒一下腌肉
[03:03] and already you can smell, it means business. 闻闻 肉香四溢啊 真不是盖的
[03:07] Get your lovely courgettes, 现在来处理一下西葫芦
[03:08] a couple of small courgettes per person. 一份意面里要多放几个小西葫芦
[03:11] Cut them in half first of all. 先把它们对半切开
[03:13] So if you look at these yellow ones, you know, 看看这种黄颜色的西葫芦
[03:16] there’s a fair old bit of seed in there. 瓤里有很多熟了的西葫芦籽
[03:18] I wanna cut them into quarters now. 再把西葫芦切成四分之一份
[03:20] And, you know, you can kind of do what you like really 其实你愿意怎么切都行
[03:24] but what I wanna try and do is 但是我喜欢先把
[03:26] just remove that fluffy bit of core 软塌塌的西葫芦籽去掉
[03:28] and slice the courgette at an angle into pieces of squash 再按照一定角度把它切成小扁丁
[03:35] that kind of look a bit like quills of penne. 让它们看上去很像是一根根通心粉
[03:39] Erm, and very often in good pasta dishes, 烹调意面菜肴时
[03:41] they do that so that the pasta 人们常常这样做
[03:43] and the sauce work well together. 以便意面与酱料融合
[03:46] And this is a great dish, cause you can get it cooked 这道菜省时省力 因为煮通心粉的同时
[03:49] in the time it takes you to cook the pasta, 你就可以把西葫芦做好
[03:51] so if I’m really quick. 如果我足够快的话
[03:54] I’ll split this green one. 现在切开绿色的西葫芦
[03:57] Middle out. Middle out. Middle out. 把中间的籽 去掉
[04:03] Slice that one the same. 把它也切成小丁
[04:11] And then with this big old fella, 现在轮到这个又大又老的家伙了
[04:13] although I’m completely breaking my rules, 我得破例而为之了

[04:18] Rough and ready. So there’s my lovely courgettes. 草草了事即可 西葫芦准备好了
[04:23] When the pancetta’s gone nice and golden and crisp, 等到腌肉呈金黄色 并且变得酥脆
[04:26] this is the point when we wanna get our courgettes into there. 我们就放入西葫芦丁
[04:29] The flavour that these courgettes 西葫芦炒腌肉
[04:31] are gonna take on is absolutely delish. 味道好极了
[04:34] So just give it a good old toss. 翻炒几下即可
[04:38] And then very important to this dish, 下面要加入一大撮胡椒粉
[04:40] a nice big pinch of pepper. 这是这道菜的精髓所在
[04:43] Right. That’s how at least I was taught by Italians, 至少意大利朋友是这样教我的
[04:46] in a carbonara you go big style on the pepper. 做乳酪意面时 一定要多放胡椒粉
[04:50] Not just for seasoning but for a bit of heat as well. 不仅为了提鲜 也为了增加香辛味道
[04:52] So just before I get on with the sauce, 在加入酱汁之前
[04:55] thyme, nice bit of thyme. 放入少许百里香
[04:57] Thyme loves courgettes, thyme also loves pork and bacon. 百里香配西葫芦和腌肉是很好吃的
[05:01] So I’ve got lemon thyme in there. 因此我要加入一些柠檬百里香
[05:03] And I’ve got some of this mottled one here. 再放入少许有杂色的百里香
[05:06] This is a flowering variegated thyme which is delish, 这种开着点点小花的百里香十分美味
[05:12] so put that in. 放进去
[05:13] And now’s the time to do that 现在我们再翻炒几下
[05:14] cause you’ve got all the lovely flavours cooking together. 各种美妙的滋味融为一体
[05:18] That will be wicked, actually, a little vegetable dish. 真是一道精妙的蔬菜小炒
[05:20] A little contorni, you know, steak and chips, 可以用作配菜 搭配牛排和薯条
[05:23] bosh that at the side, you know, 放上一些这种蔬菜小炒
[05:24] you could sprinkle that over a frittata. 也可以在煎蛋饼上面撒上一些
[05:26] You could sprinkle that over a little pizzetta. 还可以撒在披萨饼上
[05:28] You could toss that into some lovely salad leaves, 或是拌入各式蔬菜
[05:31] add a little bit of balsamic vinegar and make a lovely warm salad. 洒些香醋 做成一道温热美味的沙拉
[05:33] So, you know, what’s lovely is that clever way of 这道菜的精髓就在于
[05:36] getting the fat out of the bacon 巧妙利用榨出的腌肉肥油
[05:38] and putting the courgettes in and the herbs and pepper. 再配以西葫芦 香草和胡椒
[05:40] You can kind of use it lots of different ways. 大家可以自由发挥
[05:42] Now, the sauce is dead simple 酱汁的调制非常简单
[05:45] and this is where everyone gets the sauce completely wrong. Right? 许多人都会把酱汁做得很复杂
[05:48] For one person you want one egg yolk, 一人份的话需要放一个蛋黄
[05:51] so I’m doing two, so I’ll have two. 我做的是两人份 所以要放两个蛋黄
[05:56] So, I’ve got two egg yolks in there for two people. 为做两人份的酱汁 我打好了两个蛋黄
[05:59] You want a splash of cream, about 25 ml per person, 还需要一些奶油 大约每人25毫升
[06:03] 50 ml going in there. 一共需要50毫升
[06:05] A nice sort of handful like that of freshly-grated parmesan. 抓上一把现磨好的意大利干酪
[06:09] Don’t go using that pre-grated, horrible stuff. 别用那些提前磨好的 很难吃
[06:11] And I don’t think you need to put pepper in here, 不用再放胡椒粉了
[06:14] cause you’ve got it in there. 因为之前已经放过了
[06:15] And I don’t think you need to season it 而且也不用放盐调味
[06:17] because you’ve got seasoned pasta water, 煮意面的水里已经加过盐了
[06:19] you’ve got salty pancetta. 而且腌肉也是咸的
[06:22] And this is where the true carbonara gets serious. Right? 到了制作乳酪意面的关键阶段了
[06:27] I know by now that those courgettes have softened 现在西葫芦已经炖软了
[06:30] but they’ve still got a bit of crunch to it. 不过吃起来还是很爽脆可口
[06:33] Drain your pasta. Straight in with the courgettes. 把通心粉捞出来 倒入炒西葫芦中
[06:45] What I wanna do now is just wait. You listen. 现在让我们等一会儿 听听看
[06:48] That frying sound. It’s too aggressive for the eggs, 听见滋滋的油煎声了吧 油温太高了
[06:51] it’ll end up like scrambled eggs. 蛋黄酱汁放进去就会熟
[06:53] The heat’s subsided and now you pour it in, 现在冷却得差不多了 把酱汁倒入
[06:57] and you toss it, toss it, toss it, toss it. 不断翻炒 翻炒 翻炒
[07:00] Go over to your pasta, 移到煮通心粉的锅边
[07:01] and get some of that pasta water in here. 加入一些汤
[07:06] And you want it to be silky, you want it to be smooth 这样酱汁才能变得十分丝滑 均匀
[07:09] and you want it to just perfectly cover the pasta. 才能完全和通心粉融合在一起
[07:12] That’s what we want it to look like. 这就是我们要的效果
[07:14] Get a nice big plate. 拿出一个大盘子
[07:21] Little bit of thyme over the top. 撒上一点百里香
[07:25] Good oil. 淋上橄榄油
[07:29] Happy days. Classic dish. 美妙的时光 经典的料理
[07:33] Works really, really well with courgettes. 与西葫芦搭配起来 妙极了

[07:57] Really pretty, god knows where the shape came from. 长得挺别致 天知道它怎么会长成这样
[07:59] In a bizarre sort of way, the patty pan shape. 模样真奇怪 像是烙肉饼的锅
[08:02] is almost like the stamen of the actual courgette flower. 跟西葫芦花的雄蕊长得差不多
[08:06] Do you know what I mean? It’s very beautiful. 明白我的意思吗 总之它们很漂亮
[08:09] But again very eatable, 而且还很好吃
[08:10] and as long as its got that nice dense flesh, 只要它的瓜肉瓷实饱满
[08:13] you can pretty much do what you like with it. 你用它来做什么都行

[08:16] this is pretty cool, super cool actually. 这玩意简直神乎其神
[08:18] Er, this is a trombone squash. 它叫做”长号西葫芦”
[08:20] We planted it down there, 我们把它种在地上
[08:22] and it’s just grown like the clappers and it’s grown up this, 它就长成钟锤那么大了 而且还向上爬
[08:25] you know, 8ft pergola. 爬上这个近2.5米高的藤架
[08:28] And if you look here, look at these. 再看看这里 看这些藤蔓
[08:30] I mean, if you think about bungee ropes 简直像是蹦极用的橡皮带
[08:33] and technology like suspension bridges, i mean, look at that! 或是拉吊桥用的钢索 看它弹性多好
[08:38] They’re really quite aggressive at climbing up things. 它们十分擅长攀爬
[08:41] I mean, if I stood here for too long, 如果我一直站在这里不动
[08:42] they’d probably climb up me! 它们很可能会爬到我身上呢
[08:44] So, what I say, it’s definitely worth having a experiment, 所以说 有件事值得一试
[08:46] just go and get a load of seeds, 大家去买各种各样的种子
[08:48] choose them by picture, don’t choose them by name, 别管名字 觉得哪个照片好看就选哪个
[08:50] and plant them up, eat your way around the garden 然后种下 等成熟之后依次品尝
[08:53] and the ones you like, keep; 把喜欢吃的留下
[08:54] the ones you don’t, try something else next time. 不喜欢吃的 下次就别买了
[08:56] But don’t be fooled, 不过别被外表蒙骗
[08:57] some of the ugliest squashes and courgettes are the tastiest. 最难看的南瓜和西葫芦也许是最可口的
[09:14] I’m gonna make a delicious raw courgette salad. 下面教大家做一道可口的生西葫芦沙拉
[09:17] First of all, I’m gonna serve it with some mackerel 首先 我要处理的是鲭鱼
[09:19] and mackerel, I think, is a really underrated fish, 鲭鱼不怎么受青睐
[09:22] very, very good for you, 其实它对我们很有益处
[09:23] and if you have a look at these, 看看这几条
[09:25] I got these today from a fishmonger’s. 我今天刚从鱼贩子那里买来的
[09:28] and as soon as I saw ’em, i knew I had to buy ’em. 我一看到它们 就知道自己肯定会买
[09:30] Look at the eyes. Look how lovely and clear they are. 瞧瞧鱼的眼睛 多么清澈透明
[09:32] Absolutely smells fresh as a daisy, like the seaside. 味道如雏菊般清新 还带着海边的味道
[09:35] Now, what I want to do is just give it a little score 现在我要在鱼身上的两侧
[09:37] about half a centimetre deep, 切开几道半厘米左右深
[09:40] about a centimetre apart on both sides. Just like this. 间隔一厘米左右的小口子 就像这样
[09:43] Very, very quick. And then once I’ve done that, score this one. 迅速完工 切完一条 再切另一条

[09:55] I’m gonna stuff ’em with some rosemary. 我要在鱼肚子里面塞入少许迷迭香
[09:56] Again, probably not a sort of predictable herb for a fish, 听上去不像是做鱼时常放的作料
[10:00] but rosemary and mackerel go really, really well together. 但迷迭香和鲭鱼搭配起来真的很美味
[10:04] Salt in the cavity, around. 在鱼肚子里和鱼皮上撒些盐

[10:13] When I was in Sicily, one of the things I learned from them, 在西西里岛时 我向当地人学了一招
[10:16] they did a lot of barbecueing, 他们很喜欢烧烤
[10:18] and they would season their fish quite aggressively with salt, 烤鱼时疯狂地往鱼上撒盐
[10:20] almost like this, right, which is obviously a little bit OTT. 就像这样 实在是太过火了

[10:49] that we’re gonna get wonderful, crispy skin, 我们兴许能把鱼皮烤得十分酥脆
[10:52] and it won’t stick. 又不粘在烤架上
[10:53] Now, in my funny little oven here, 现在把这几条鱼依次放在烤架上
[10:56] i’m just gonna line these up. 再放进我的小烤炉里
[11:03] Rack ’em up on here. What a lovely sight. 铺在烤架之上 多么美妙的场景啊
[11:08] Into the barbie. 放入烤炉
[11:10] You wanna cook them about, on a medium heat, 烤制的时候温度适中即可
[11:13] about three minutes on each side – six minutes. 大概每面要烤三分钟 一共六分钟
[11:16] Now, salad-wise to go with this, the raw zucchini. 再处理一下沙拉要用的生西葫芦
[11:19] Now we’ve got a flower here, 拿起一株西葫芦花
[11:20] we can peel that little mama off, 把花托摘掉
[11:23] just, you know, it’s been washed, 因为已经洗干净了
[11:24] so, just tear it up, get it in there. 直接撕开花瓣 放入盘子里就行了
[11:27] Nothing wrong with that, completely eatable. 绝对可以食用 不会出差错的
[11:28] So we’ve got some lovely courgettes, 这里准备好了西葫芦
[11:30] they’re all quite young and they’re all nice and crunchy, 它们都还很嫩 脆生生的
[11:33] and unless you’ve got brilliant knife skills, 要是你没有出神入化的刀工
[11:36] one of the best things to use is one of those little speed peelers 最好还是用这种切片器
[11:38] so you can just peel them in, like this. 像这样一条一条地刮下去
[11:40] And you’re gonna get 这样就能得到
[11:41] perfectly thin slithers of beautiful courgette. 很多又细又滑的西葫芦片了
[11:45] And as it gets hard to peel, just turn it around, 刮起来不顺手的时候 就转动一下
[11:49] and actually what you get left with 这样最后剩下的
[11:51] is that little white, fluffy centre 就是西葫芦那白色的 软塌塌的芯
[11:53] which is sort of my least favourite part anyway. 正好是我最不爱吃的部分
[11:55] Lets have a little look at our fish. 看看鱼烤得怎么样了
[12:01] Oh, that looks nice. 真不赖
[12:04] Have a look at these. 瞧瞧啊
[12:08] Right… 不错
[12:11] Turn those over, look at those. 翻个面 瞧瞧
[12:16] Beautiful. 棒极了
[12:24] Back in there. 再放回烤炉中
[12:29] Nice. So they’re cooking away, seem to be all right. 好了 鱼应该烤得不错
[12:32] And then we can start on these lovely yellow ones – great colour. 现在开始削黄色西葫芦 真鲜艳
[12:36] And the reason that you can have these courgettes raw 我们之所以可以生吃这些西葫芦
[12:38] is because they’re so young and crunchy 是因为它们很嫩 很脆
[12:41] and these patty pans, these are sweet. 而这些像饼锅的家伙 味道很甜
[12:43] Brilliant shape, look like a bloomin’ alien. 长相不俗 简直像从外星来的
[12:48] It takes a little bit of time to rattle through these, 处理好这些西葫芦要费些时间
[12:51] but it’s a nice effect, quite unusual 但效果很好 很特别
[12:53] and it’s not every day you have a zucchini salad, 要知道你不是每天都能吃到西葫芦沙拉的
[12:56] so now is our job to make it taste delish. 所以我们要把它做得美味一些
[12:58] Now, as far as taste is concerned, 说到美味
[13:01] olive oil, extra virgin olive oil, good flavour, 这种特级初榨橄榄油是很好的选择
[13:04] and then we want some lemon, 然后我们需要些柠檬
[13:07] nice squeeze a lemon, straight over there. 将柠檬汁挤在上面
[13:11] About four to one, lemon to oil. 柠檬汁和橄榄油 比例约为四比一
[13:14] And then, salt and pepper. 再撒些盐和胡椒粉
[13:16] Nice pinch of salt, nice little bit of pepper. 取适量的盐 再来适量的胡椒粉
[13:20] Herb-wise, I wanna use basil, 调味香草 我选择罗勒
[13:22] brilliant herb, works well with courgettes. 一种很好的调料 和西葫芦味道很搭
[13:24] You can use mint as well, even a little bit of parsley. 你也可以放入薄荷叶 西芹也可以
[13:28] Just tear it off quite bravely. 像这样把叶子撕开
[13:30] And then chilli – 然后是辣椒
[13:33] chilli, I think, just makes this work, 加些辣椒味道会更好
[13:34] chilli and the mackerel is brilliant. 辣椒配鲭鱼 美味无比
[13:38] Get rid of the seeds. 去掉籽
[13:40] Finely chop the chilli into like little flecks like that. 像这样 把辣椒切成小碎丁
[13:51] Sweep it up, get that in there. 盛起来 放进盘里
[13:53] And then just gonna mix it up with my fingertips, 然后用手进行搅拌
[13:57] and they almost feel silky, you know? 手感嫩滑无比
[13:59] And you wanna get every single little zucchini leaf 拌的时候要确保西葫芦
[14:02] coated in that lovely flavour. 能够充分地入味
[14:06] Now let’s have a taste. 尝一下
[14:11] Tiny bit too lemony. 柠檬味有些重
[14:13] My folk wouldn’t correct that. 我们家人比较喜欢这种味道
[14:15] A little bit more olive oil. 再加点儿橄榄油
[14:17] And let’s check these lovely fish. 看看鱼怎么样了
[14:20] They should be about done. 应该烤得差不多了
[14:26] Yeah, that’s gorgeous. 成色很好

[14:32] Just put that there like that, slide ’em off like that. 将鱼慢慢地放到盘子上

[14:40] about the way I serve this 这道新式佳肴
[14:42] four nice fish on a plate, 四条美味可口的鱼
[14:44] toss this salad and put it in a nice big brave pile there. 旁边再配上沙拉 像这样堆成一堆
[14:48] Look how lovely and delicate that is. 简直是色香味俱全
[14:50] Really, really nice. 真的很不错
[14:51] And just finish it with a little bit of olive oil. 再加一些橄榄油 这道菜就完成了
[14:54] Give that salad a go and don’t forget Mr Mackerel – 快来品尝沙拉吧 不要忘了鲭鱼先生

[15:08] So one of the big, big bonuses 自己种西葫芦最大的好处之一
[15:10] of growing your own courgettes is you get the flowers. 就是你可以得到它们的花
[15:12] And you never ever see the flowers in the supermarket. 超市里是绝对见不到西葫芦花的
[15:14] You might get ’em in farmers’ markets, 在农贸市场或许可以找到
[15:16] but if you see em, buy ’em. 如果你见到了 一定要买一些
[15:17] Because they are absolutely delicacy. 因为它们真的很美味
[15:19] And what I want is the little small courgettes 我要找的是那种小西葫芦
[15:21] with a beautiful little perfectly-formed closed flower. 它们的花美丽可爱 含苞待放

[17:01] Right, so I’m gonna make 我打算做一道
[17:03] a beautiful zucchini – courgette – fritti. 美味的香炸西葫芦花
[17:06] And we’ve got these incredible flowers- 我们已经摘来了一些西葫芦花
[17:09] which you can get from farmers’ markets. 农贸市场有的卖
[17:11] If you grow your own, you’ll get them for free. 但如果自己种的话 就能得到免费的
[17:13] I’ve got some marigolds, which are edible, 我还摘到一些金盏花 虽然可以吃
[17:15] but for it’s all red, you know, 但由于它是红色的
[17:16] get all the insects coming in, cause it’s organic. 又是纯天然野花 所以很招虫子
[17:18] I’ve got some zucchini leaves. 我还摘了些西葫芦的叶子
[17:21] So what I wanna do? I’d wanna stuff these little darlings 接下来 我要给这些小西葫芦花
[17:23] with some ricotta- 填些干乳酪馅儿
[17:25] about 200 grammes of ricotta. 我准备了200克左右的干乳酪
[17:27] Now ricotta is quite a mild, clean, fresh-tasting cheese. 由于干乳酪的味道比较清淡
[17:31] So we wanna season it up – salt, pepper, 我们要给它调调味 放些盐和胡椒
[17:36] I wanna use parmesan- 再放些意大利干酪
[17:38] a small handful of parmesan will do the trick. 一小把干酪就可以了
[17:42] And to flavour that, 为了提味
[17:43] I wanna have something to cut through it, 我想让乳酪里渗入些其他味道
[17:45] so I want nice lemon, I don’t want the juice, 因此我需要些柠檬 但不是柠檬汁
[17:47] I actually want the zest – nice and fragrant. 而是味道清香诱人的柠檬皮
[17:50] So, get that in there. 放入柠檬皮碎屑
[17:54] Then I’ve got mint. 然后放入薄荷
[17:55] Mint, courgettes are like incredibly good friends, 薄荷和西葫芦可是最理想的烹调搭档
[17:59] absolutely delish. 配在一起 味道极佳
[18:00] So just get a nice small handful of mint, 撕少量的薄荷叶
[18:03] roll it up, finely chop it. 卷起来 均匀地切碎
[18:12] Straight in, like that. 放入盘中
[18:14] Now, chilli – run your knife… 下面切辣椒 用刀
[18:19] down the little fella and get most of these seeds out – 切开辣椒 把里面的籽去掉
[18:22] As many as you can, and that’s the aggressive fiery heat 去干净些 呛人的辣味都来自辣椒籽
[18:26] that’s gonna blow people’s heads off. 简直辣得人头痛欲裂
[18:29] then we’ll finely slice the chillis. 去籽之后 将辣椒均匀地切碎
[18:33] Really try and make a job of finely slicing it well, 一定要把辣椒切得均匀细碎些
[18:36] the reason there is cos someone wanna 因为这样才能使
[18:37] get that heat and that fragrance distributed evenly 辣椒的辣味和香气四散开来
[18:40] and not big old chunks that catch people numb. 切成大厚块儿只会把人辣得舌头发麻
[18:43] Let’s get that in there. So on top you go. 将切好的辣椒放入盘中
[18:45] Lovely colours, look at that. 瞧 颜色多鲜艳
[18:46] And then I want some nutmeg, 然后我需要一些肉豆蔻
[18:48] lovely seasoning for cheese, 一种很好的乳酪调味品
[18:50] but I only want about 15 little brushes there. 擦15下就够了
[18:57] So now just give it a nice little mix-up. 把材料搅拌均匀
[18:59] And with that, you can do so, so much. 这个乳酪馅儿有很多吃法
[19:02] You can plop little blobs of that onto pizzas, 你可以把它抹在披萨上
[19:05] onto frittatas or omelettes. 肉馅煎蛋饼上 或者煎蛋上
[19:06] Much you can put them on mushrooms, 你还可以抹在蘑菇上
[19:08] and just mound ’em up, drizzle it with olive oil, 堆在蘑菇上 浇点橄榄油
[19:10] roast the little monkeys – beautiful. 放进烤箱里烤 人间美味
[19:13] So, let’s have a little taste. 来尝尝
[19:17] Chilli’s there, yeah. 辣椒味儿出来了
[19:19] I’m registering lemon, mint – if you can taste everything, 放些柠檬和薄荷 按个人口味添加食材
[19:22] unless you have a preference aside, tweak it, or… 若你手边有自己爱吃的小料 就加进去
[19:25] lovely, that is perfect. 殊途同归嘛
[19:27] So here are my lovely little courgettes, 现在出场的是我们可爱的小西葫芦
[19:31] and orange just get’em out. 橘黄色的 把它们拿出来
[19:34] Got one of these male ones with spindly little legs, 这个是有着细长茎的雄花
[19:37] very nice. 不错
[19:38] Got a nice green one, another spindly one. 来朵绿花 再来朵细长的
[19:41] Right. So what you wanna do is when you get these flowers, 准备好西葫芦花之后步骤如下
[19:43] if it’s open a little bit, you can get in there, 如果花口微张 就可以直接填料
[19:45] or if you have to, just bust the side open 如果花口紧闭 用拨开一个口
[19:47] and just put your knife in and take the little stamen out, 然后把刀伸进去 剔出雄蕊
[19:53] cos that’s a tiny bit bitter. 因为雄蕊的味道有点苦
[19:55] But once you’ve done that, 剔出雄蕊后
[19:56] you can get this wonderful cheese 盛一点儿干乳酪馅儿
[19:58] and just stuff it in there. 填进去
[20:00] And say you’ve got a bit of that that comes out, 如果馅儿溢出来了一点儿
[20:02] just pull a little bit of the petal out and around, 就把周围的花瓣往外拉一拉
[20:05] and you can actually just tuck that up, 用花瓣把馅儿包住
[20:07] and then just use your hand and just cup it, cup it, cup it. 用手裹住花朵捏一捏
[20:10] And actually now it’s got filling in it. 一朵西葫芦花填好馅儿了
[20:11] It’s pretty safe and strong. 紧实又饱满
[20:14] A little tweak that I do 我有一个小秘诀
[20:15] is just get a regular, everyday sandwich bag. 准备一个日常用的三明治袋子
[20:21] Put it to one corner, and then cut the corner, 把馅填满袋子的一角 用刀切一下
[20:26] so you’ve kind of made yourself a little cheap, homemade piping bag. 一个小型廉价的家用管型袋就做好了
[20:32] Oh, hello! Hello, big fella. 你好啊 老兄
[20:42] Now, that would have been tasty. 这朵花的花粉一定很美味
[20:44] The reason that Mr Bumble Bee is in there 黄蜂先生之所以会呆在花里
[20:47] is because it’s such a lovely, cosy place to be. 是因为那里实在是个很舒适的地方
[20:50] Pipe it in. Fill it up. 挤进去 填满
[20:55] And that leaf, just bring it around, 用花瓣包住
[20:57] tuck the old fella up in bed. 像盖被子一样把馅儿包紧
[21:00] Give it a little… friendly hug. 捏一捏 给它一个友好的拥抱
[21:04] Number two. Very nice. 第二朵完成 不错
[21:06] And then this fella here, this, 看看这朵花
[21:08] you can see it’s a really nice one, 它的形状非常好
[21:10] perfect for holding a bit of filling, 非常适合包乳酪馅儿
[21:12] perfect little purse, 就像个小提包一样
[21:13] and these little bit things the outside, 至于外面的这些小叶子
[21:15] if they look a bit green, you can just clip those off 如果已经开始发绿了 就把它们掐断
[21:17] and then inside here pull the leaves back, 然后收拢花瓣
[21:22] just jab it down there. 把馅儿挤进花里
[21:28] Get it in there. 像这样挤进去
[21:29] Just hug and squeeze that filling, 轻轻地捏一捏 让馅料均匀分布
[21:32] so it’s all into nice shape. 使外型变得饱满匀称

[21:42] Now, with the leftover ricotta, 现在 我要把剩下的干乳酪
[21:45] just roll ’em up into little balls, 团成乳酪球
[21:47] it seems to shame to waste this, 如果干乳酪馅儿还有剩余
[21:49] if it doesn’t fill all of your courgettes. 白白浪费岂不可惜
[21:51] Now there are many, many batters you can do 制作面糊的方法五花八门
[21:54] and many wonderful recipes, 也有很多不错的烹调方法
[21:57] but the biggest key to having a crisp batter 但要想让面糊炸出来后香脆可口
[22:00] is basically frying things in small batches 关键在于 一次要少炸几个
[22:02] and serving ’em straight away. 炸好后直接上桌
[22:04] That’s your biggest bonus. 这是制胜的要诀
[22:05] So we’ve got the flowers done , we’ve got my balls ready, 花已填好馅儿 乳酪球也已准备完毕
[22:08] and I’m gonna make a lovely light batter. 下面就要开始调面糊了
[22:09] For this quantity, probably double this quantity, 要调出裹这些的量 或两倍于它的量
[22:12] I want about 200 grammes of self-raising flour. 我需要称大约两百克的自发面粉
[22:16] Self-raising flour is great, 自发面粉很省事
[22:17] because it’s got its raising agent in there already, 因为它本身含有膨松剂
[22:19] which is gonna create bubbles and lightness. 调出的面糊清淡且有起泡
[22:23] Now you can put water in there, 你可以往面粉里加水
[22:24] but what I’d like to do is put wine in there. 但我选择加葡萄酒
[22:27] And I could give you a quantity, 我可以加入一定量的酒
[22:28] but I’d much rather show you a texture. 但我更想依据粘稠度加酒
[22:31] So I’m just gonna literally spoon in… 拿一把勺子搅拌
[22:36] the wine like this. 倒入葡萄酒
[22:39] And you wanna make it like thick pancake batter, 如果想调成做煎饼用的稠面糊
[22:41] just keep adding it… 就多加点葡萄酒
[22:44] Get some salt in there. 放点儿盐
[22:45] But we will season it on top as well, which is quite nice. 当然 炸好后我们还会再撒盐
[22:48] So that’s good, 看上去很不错
[22:49] that’s looking pretty much exactly what I want. 正是我想要的样子
[22:52] So you know if you’ve got a nice batter – finger in – 检验一下你的面糊质量 手指放进去
[22:54] does that sort of thinly coat it? 手指上是否裹着一层薄薄的面糊
[22:56] And does the excess drip off? 是否有多余的面糊向下滴落
[22:58] Absolutely. Beautiful. Happy with that. 是的 完全符合
[23:01] Now what I wanna do is get my lovely balls 现在 我要把乳酪球
[23:03] and just plop them into that silky batter. 放进面糊里
[23:06] Shake the balls about. Happy days. 摇一摇 让乳酪球裹上面糊
[23:09] Then get your courgettes,… 然后放入西葫芦花
[23:12] and just plop them in, 像这样把它们放进去
[23:14] give ’em a shake – basically I’m just covering it. 摇匀 让面糊完全覆盖西葫芦花
[23:17] Everything’s covered. 裹好面糊了
[23:19] Now, if you’re not gonna use a proper deep fryer with a thermometer, 如果你不打算用有温度计的油炸锅
[23:23] you know, plop a little bit of potato in there, 就在锅里放一些土豆
[23:26] soon as it gets golden brown, 当土豆变成金黄色时
[23:27] you know you’re around about 180, 油温就大约到了82摄氏度
[23:29] a good deep-frying temperature, 这是最理想的油炸温度
[23:31] and then you can rock and roll. 然后你就可以开炸了
[23:32] Now, dip it and then when you put it into the oil, 蘸一下面糊 当你准备把花放进油锅时
[23:36] put it in, hold it for a second, 停在油面上等一会儿
[23:38] and plop it away from you so it’s nice and safe. 反方向放入锅中 保证安全
[23:41] Straight on to the next one, don’t muck about. 立即放入下一朵 不要间隔太长时间
[23:43] Do exactly the same. And away from you. 重复上面的动作 向着你的反方向
[23:48] Always away from you so it doesn’t drip and hit you. 这样的话就不会有油滴溅出烫伤你
[23:51] And away from you. And even your balls – 炸乳酪球的时候也是一样
[23:54] pick your balls up very gently and plop ’em in the oil. 轻轻地拿起乳酪球 把它们放进油锅里
[23:58] And actually you can even deep-fry the marigold 你还可以把金盏花也炸了
[24:02] that was planning next week, that’s nice and edible. 它也可以食用 本应下次节目再做
[24:04] Let’s do this leaf. 再炸一片叶子
[24:08] Now what’s quite nice about using the self-raising flour is, 用自发面粉的优点就是
[24:12] it’s got a natural rising agent, 面粉自身含带膨松剂
[24:14] so as soon as it hits, I mean it’s activated by heat, 而膨松剂会被高温激活
[24:16] so as soon as it hits that heat, 所以一旦接触到高温
[24:19] it’s gonna start getting light and crisp. 表面就会变得膨胀松脆
[24:22] Right, let’s get these babies out. 现在 把它们盛出来
[24:24] Try and shake the worst of the oil off. 要控一控油
[24:34] You put’em on a nice bit of kitchen paper like this, 把它们盛到一张铺有餐巾纸的盘子上
[24:37] bit of salt on top, and then all you wanna do 上面撒些盐 你可以
[24:39] is picking it up… and you can hear – listen… 把炸好的花拿起来 听一下
[24:42] How lovely and crisp it is. 多么清脆的声音啊
[24:44] Just get your lovely flowers 拿起炸好的西葫芦花
[24:47] and put them in and around the plate. 把它们放进盘子里 围成一圈
[24:49] I’ve got the crispy leaf here, 这是炸脆的叶子
[24:51] which looks absolutely mad but delish. 看起来很诡异 但绝对美味
[24:54] And all I do with that is get a nice lemon… 然后切一个柠檬
[24:59] squeeze it all over like that, 把柠檬汁挤在上面
[25:00] and you gotta eat it quick now. 你得快点儿吃
[25:02] Let’s have a little taste of this. Let’s cut the flower off. 来品尝一下 把花切开

[25:15] and you get that beautiful filling in the flower. 和美味的乳酪馅儿
