[02:30] and the truth is…you can come do a bit of a fatboy silm, 实际上可以随意搭配

[07:06] cos it kinda helps the heat render that fat out. 可以在高温之下把肥肉的油熬出来

[07:19] and then get yourself some sage. 然后拿一点鼠尾草
[07:22] I just want to get sort of a nice… 我会摘下好的

[07:33] And the same on that one. 这块也一样

[07:50] And then I’ve got a pan already in the oven, pre-heated. 烤箱里的平底锅已经预热好了

[08:01] And literally all I need to do… 我现在只需要

[08:09] And I get my pork chop and I just sort of put it down like that. 把猪排一块块放进去

[08:19] Get this one in. 这块也放进来
[08:37] And you know it’s nice and hot 锅预热后温度已经很高了
[08:39] because obviously it’s sizzling away. 因为可以听到锅里的滋滋声
[08:40] Put a sage leaf on top of that. 再逐个放上一片鼠尾草
[08:42] Just simple flavours, no mucking about. 口味简单清淡就好 不用太复杂
[08:52] A little bit of olive oil… 淋点橄榄油
[08:56] and just pop it in the oven. 再把锅放回烤箱里
[08:57] A chop like this in a pre-heated oven at about 220, 这种猪排放到220摄氏度的烤箱里
[09:00] about 15 minutes should be more than enough 大概15分钟就完全足够
[09:03] until they’re really nice and golden. 烤成金黄色就好了
[09:12] Are you ready? 准备好了吗

[09:17] That’s 12 minutes of cooking in a hot oven. 这个在烤箱里大概烤了12分钟

[09:47] Look at that. And then if you pour away this fat… 下一个秘诀 把锅里的肥油倒出去
[09:51] See in the bottom here? In the bottom of the pan, 看到平底锅的底了吗
[09:54] you’ve got sort of like sticky bits. And you can literally just get a lemon. 还有点肉油脂沾在上面 你可以用个柠檬
[10:02] All right, that’s all you need… 只要柠檬就够了
[10:03] Those sticky bits, they’re not insignificant. 这些肉油脂扔了可就浪费了
[10:06] As soon as I start rolling them around, look at that, 我这样把它搅开 看吧
[10:09] it’s like, goes gluey, Marmite. 它就化开了 这可是上好的马麦酱
[10:14] That, is like the best bit, so you don’t forget about that bit. 这一小点是精华所在 所以你别忘了
[10:20] So if you have gone to the trouble of growing your own… 如果你费尽千辛万苦自己种出了
[10:23] beets, carrots, veggies. 甜菜 胡萝卜和各种蔬菜
[10:26] You know, this is a lovely way to sort of send them off 这种做法是个不错的办法
[10:28] in a good way, you know, bit of respect. 以示对这些蔬菜的尊重

[11:15] you can be getting carrots pretty much all year round, 你就能全年不断都有胡萝卜

[11:21] I mean they’ll grow in most things, 胡萝卜基本上在各种土质中都能成活

[11:24] So, what we do is just level off the ground… 首先把土摊平
[11:29] and then create a little furrow or a trench with your hand. 然后用手掏出一些犁沟和沟渠来

[11:33] I love buying the mixed seed. 我喜欢买混种

[11:38] Just sort of sprinkle them… 就这样沿着你刚刚挖的犁沟
[11:41] along the trench, you know, 把它们洒进土里

[11:45] And then as soon as you’ve done that, just cover the furrow in 播完种以后 再用土把它们埋起来

[11:51] About sort of May time, you’ve got a carrot that is kind of getting… 到了5月左右 你的胡萝卜就长得…

[12:08] You know, once the seeds go in, 种子一旦被播撒进去了
[12:10] they kind of grow like this, right next to each other. 它们会像这样挨着长

[12:28] even as they’re little sprouts, 哪怕只是长出了一些小嫩芽
[12:29] pick out a few intermittently 你得时不时拔一些出来
[12:32] and what’ll happen is you’ll get lovely baby carrots. 这样你就能得到些小胡萝卜
[12:35] And as they get more space, 剩下的胡萝卜空间变大了
[12:36] they can turn into slightly bigger fellas as well. 也就能长的大些了
[12:38] Definitely worthwhile 第一次种这个
[12:40] if you were gonna do it for the first time, 绝对会有回报
[12:41] or even with a few sort of seeds with the kids or something. 或者可以买有幼苗的种子
[12:44] Sow on the window seal, or on the window bucks, 可以种在窗台上
[12:46] or in your back garden. 或者你的后花园里
[12:47] You know, get the mix seed, 一定要买混种
[12:48] loads and loads of fun. 非常非常有趣
[12:50] Three months and you can start eating your carrots. 只要等上三个月就能吃到自己种的胡萝卜

[13:20] So I’m gonna do a really, really 所以我打算要做一道

[13:33] And then once they’re all sort of nicely peeled, 表皮削掉以后

[13:38] And what happens is, you just get these lovely 这样你就可以很轻松地
[13:40] wafer-thin sort of bits of carrot. 得到这些很薄的胡萝卜片了
[13:45] Carry on sort of peeling and peeling and peeling and peeling… 继续刨 继续削
[13:48] all of the carrots and then… 所有的胡萝卜 然后
[13:52] What I’ve got over here, is I’ve got a pan… 我身后有一个平底锅
[13:58] of minced or ground lamb. 正煎着羊肉馅
[14:00] And literally all I’ve done is put it in a hot pan 我所做的就是把它们放进热的平底锅
[14:03] and just get it really, really crispy. 煎到非常酥松香脆
[14:05] So what I wanna do to spice these lovely crispy bits 为了使这些碎肉丁儿入味

[14:45] So very quickly, I wanna finely chop these. 迅速切片

[15:25] I say a thumb-sized piece of ginger 一块拇指大小的姜

[17:28] And then, just wanna get 接下来 加上
[17:29] a really nice handful of your carrot salad. 一大把你做好的胡萝卜沙拉

[17:40] that’s a snacky thing that I would love 把它当个下酒菜是我最爱
[17:43] just with a bottle of beer and, you know, 配上一瓶啤酒

[17:49] or, you know, crack some poppadoms or something like that. And… 就这样 切几块这种印度烤圆饼
[17:53] you know, something a bit unusual. 一道不同寻常的佳肴
[18:12] So I’m gonna do something a little bit out of the ordinary. 我要做点不同寻常的料理
[18:14] I’ve got my beets, 我收了一些甜菜
[18:16] I’ve got the beetroot leaves, a bunch of rosemary 还有甜菜根的叶 一束迷迭香
[18:18] because it surely can’t hurt, and I just wanna slightly stop 放点这个有益无害 而且我想用它避免
[18:22] the direct coals from really scalding the beets. 炭火烤坏甜菜
[18:25] Put the beetroot leaves around it. Really simple. 用甜菜叶包住它 这很简单
[18:28] Cover it… 包起来
[18:30] Around the beet and just pinch it 包住甜菜然后捏住
[18:34] like a Christmas cracker. Like that. 捏成像圣诞礼炮那样 就像这样
[18:38] Once you’ve got it like that, just get yourself a little knife, 把这弄好以后 找把刀
[18:42] and just prick into it… 前后戳一些洞
[18:45] cause I want the smoke to go through. 这样烟就能进去了

[18:52] get a load of your coal, make yourself a little hole… 拿出一些炭块 挖出一个小坑
[19:00] It’s really hot. White hot. Little hole there, 好烫 真心烫 弄好了小坑
[19:05] beetroots go in. Ooh! 甜菜躺进去
[19:08] Try not to burn yourself! And then coals on top. 小心别烫伤自己 再把炭块盖回去
[19:13] If you didn’t want to do it on the barbecue, 如果不想烧烤
[19:15] you could put them in an oven under a grill and just blacken them all over. 你可以把它放在烤架下烤透
[19:17] And you’ll get a charred flavour, which is still delicious, 会有一点炭味 还是很好吃的
[19:20] but you won’t get the smokiness. And that’s it. 但不会有烟熏的味道 这样就行了
[19:22] Leave it for about half an hour, 40 minutes, 把它放在那烤半小时到四十分钟

[20:03] But I just, I normally just do them quite simply, 但我一般都做得很简单

[20:25] Try these blackened beetroots 尝尝这些烤甜菜
[20:27] – They’re incredible. – I’ll just finish these quickly. -很好吃的 -那我先快点把这些弄完

[20:42] Right. So, in here, 好了 看这儿
[20:45] I’ve got my beets… 我的甜菜烤好了
[20:48] And let’s just pull these out, 我们把它们倒出来吧
[20:49] all the rosemary I put in and the actual beetroot leaves. 放进去的迷迭香和叶子
[20:52] So they did protect the beetroot a bit, 确实起了点保护作用
[20:54] but they’ve still charred. They’ve still burnt. 但还是有点烤焦了
[20:56] And-and the truth is, that’s what’s supposed to happen. 不过实际上 这很正常
[21:00] I’ve got a fair bit of work to be done here. 我得把它们加工一下
[21:02] If you’d had some that actually 如果你有些像这样
[21:03] have caught a little bit, like this old fella, 烤焦了点的小家伙
[21:07] you know, you might have to sort of cut it out. 你可能得把烤焦的部分切掉

[21:19] Sometimes, you can just peel the skin off like that. Lovely. 有时你只要把皮剥掉就可以了 很好
[21:22] So a little bit messy, but it’s well worth it. 虽然有点脏乱 不过还是值得的
[21:25] So get a nice bowl, 然后找个大碗
[21:28] cut your beets into sort of like erratic, little chunks. 把你的甜菜切成小块
[21:31] You know, you can see inside, they’re still absolutely beautiful. 你能看见这中间 颜色还是非常美的
[21:35] And I wanna kind of cut them into 我要把它们切成
[21:38] sort of reasonably rustic sort of chunks. 大小适中的块儿
[21:40] So halves. 一切两半
[21:41] You know, the smaller ones can either be whole or just halved. 小点的可直接放进去或切两半
[21:45] And, this one I’ll just slice into quarters. 这个大点的我切四块
[21:48] So you’ve got wicked flavours in there. 味道美得像施了魔法
[21:50] So now, I’m gonna dress this little monkey. 现在 我要给这些小家伙上调料
[21:53] I’m gonna dress it with good red wine vinegar. 我要淋上上好的红酒醋
[21:57] About a tablespoon. 大概一汤匙
[22:00] And some pepper, salt… 接着放胡椒 盐
[22:03] Beets, they do like a bit of salt. 甜菜放盐味道真的不错
[22:06] Good extra virgin olive oil, 特级初榨橄榄油
[22:08] three tablespoons. 三汤匙
[22:10] Lovely colours. Now, I want some freshness in there. 颜色多漂亮 然后我要放点提香材料
[22:13] I want fresh herbs. 来点新鲜香草
[22:14] So I’ve got some tarragon here, got some nice parsley. 我这里准备了一些龙嵩叶 一些欧芹叶
[22:16] Just rip, rip the parsley off with a little bit of the stalks 就从茎上端揪下一些欧芹叶
[22:20] cos the stalks are really sweet and delicious, the upper ones are anyway. 因为顶端叶子实在是甜香美味
[22:23] And then, sort of a nice, little wodge of some tarragon, 接着 一小团龙嵩叶
[22:27] roll it up a bit and finely slice it, 卷一卷 仔细地切碎
[22:30] so just slice it up like that. 这样切
[22:35] Run your knife through it a few times 用刀来回切几遍
[22:41] and that is all we wanna do to those beets. 这就是甜菜所需的调料
[22:46] So once you’ve got it in there, just give it a really nice toss. 菜叶丢进去之后 来回上下翻几遍
[22:54] Lovely, all nice and coated. Taste, taste, taste. 好了 都妥妥地沾上料了 尝尝
[23:02] Incredible. 人间美味
[23:04] Smoked beetroots man, they rock! 烟熏甜菜根 真是太销魂了
[23:07] Really, really good. So… 超级 超级美味
[23:10] What I wanna do is, I’ve got two little, 接下来 我拿了两小块
[23:12] lovely medallions of beef. 肉质鲜嫩的上好牛排
[23:15] Some salt… 撒盐
[23:17] some pepper. Ooh, Mr. Pepper loves steaks! 撒胡椒 胡椒爱牛排
[23:20] Get the bottoms done too. Right, I will… 让反面也沾上 接着我要
[23:23] get a little bit of my excess oil from here and pour it over my steaks. 把这里多出的油倒在我的牛排上
[23:28] Just, you know, just, just to pat it all over. 然后像这样把牛排上上下下拍一遍
[23:31] We don’t want it to stick to our bars. 我们可不想它沾到烧烤架上
[23:33] And then, a bunch of rosemary on the barbie… 然后 炭火上放束迷迭香草
[23:37] and this old fella 然后把这两个家伙

[23:43] Any excuse to get flavour in, d’ya know what I mean? 想尽一切办法让香味能沁进去 明白吗
[23:45] Charcoal, bit of burning rosemary, top drawer. 炭火 燃烧的迷迭香 最高级的享受
[23:48] So while these steaks are cooking 在烤牛排的时候
[23:50] they’ll only take a minute and a half 烤一分半钟就好了
[23:51] ’cause they’re only a centimeter and a half thick – 因为它们只有一厘米半厚
[23:53] I’m just gonna make the quickest, loveliest, little sauce. 我来做快速美味小酱料
[23:56] Cottage cheese, and what I actually wanna do, 正宗乡野乳酪 我要做的就是
[23:59] is take something quite sort of plain, bland, 用非常平和 清淡的乳酪
[24:02] and just pour in about four tablespoons 加入四汤匙量的
[24:05] of good extra virgin olive oil. 特级初榨橄榄油
[24:07] Just sort of break it, just sort of cut it. 把乳酪化开 把味道提出来
[24:10] Tiny pinch of salt, bit of pepper, 一小撮盐 一点胡椒
[24:13] lemon zest. Right, nice, about half a lemon. 柠檬屑 大概半个柠檬
[24:18] Cut it in half, whole lemon going in there. 把一个柠檬切一半 汁全挤进去
[24:24] Just gonna turn these steaks. 把牛排翻个面
[24:30] And while that’s going, I wanna get lovely thyme tips. 烤这一面的时候 我要弄点百里香叶
[24:35] And this is lemon thyme as well so delish. 这也是柠檬百里香 所以味道非常好
[24:37] Just pinch it off in there. Lovely thyme tips. 扯碎扔进去就好 惹人爱的柠檬香叶
[24:40] Everyone says they’re sort of woody herbs, 人人都说木本香叶
[24:42] they’re for roasting and stuff. 是烤肉必备
[24:42] You get the little new growth and the little tips, 不断有新的枝芽长出来
[24:45] and they’re always lovely. 始终那么美味
[24:48] Fold it through a bit more… 搅一搅
[24:51] Beautiful. 形色诱人
[24:52] And then, get your lovely beets 接下来 拿出你做好的甜菜
[24:55] onto the plate. 摆盘
[24:58] They just look great. I’m just loving these colours. 太好看了 我就是爱这种颜色
[25:01] Here we go. 牛排也来了
[25:04] And then you get your special bit of clodded 接下来就该轮到你的
[25:10] as your further. 特制调料上场了
[25:12] And that is just a great, great little dish. 这就是一盘美餐
[25:16] I wanna let Brian have a little go on this. He would love it 我要让布莱恩尝尝 他会喜欢的
[25:21] And if you want, just finish it with a little bit of quality oil. 你乐意的话 淋点上好的油就可以收尾了
