[05:55] quite a considerable amount of lemon juice, 挤入奶油中

[06:54] The things I love about potatoes is they’re so, so easy, 土豆易于处理 我喜欢这一点

[07:03] that have got a little sprouts coming out. 长了一些芽

[07:26] What I’m gonna do is just dig a little hole six inches deep 挖一个六英寸深的小坑
[07:30] and plop my boy in. 放进小土豆

[07:37] Cover it up… 用土掩住
[07:38] and that’ll grow. 然后它就会生长

[10:03] And all I like to do is just put these tomatoes here, like that, 我要把西红柿放在这儿 就像这样

[10:12] So, what I wanna do, is get a knife, 我要用刀
[10:14] just get the tomato and just pop it, just like that, 在西红柿上切一道小口
[10:18] and by tapping them like this, 切出小口后
[10:20] we’re gonna pop them in boiling water, 放进沸水中
[10:22] and that little cut will 小切口的存在
[10:24] make sure the skin just comes straight off, 可以帮助去掉表皮

[10:30] And my new potatoes are boiling and they’re cooked. 土豆煮熟了

[10:37] Once you’ve done that, I need my cloth. 完事之后 我得找块布

[10:51] So 45 seconds, that’s literally 沸水煮西红柿
[10:53] all you need in boiling water with the tomatoes. 只需45秒即可

[11:24] And by taking it off, what you allow this to do, 去皮之后 西红柿会脱水
[11:27] is the tomato to dehydrate and become sweet and more intensified, 变得更甜 味道更浓郁
[11:31] and for the flavour and a bit of the juices from the tomato 西红柿的味道和汁液
[11:34] to cook into the potato, which is gonna be like rock’n’roll. 会融入土豆中 简直是绝配
[11:37] I’m gonna lay it out on this board here, clean table. 倒到干净的桌子上
[11:44] This is what I’m gonna do. 接下来
[11:46] With my potatoes, I’m gonna get my thumb, 先处理土豆 用拇指

[12:30] you could use a food processer or you could use a process motor 你也可以用食物料理机或电动机
[12:33] Get oregano or marjoram. 取一些牛至或墨角兰
[12:35] Of course you could use rosemary instead, 当然你可以用迷迭香替代
[12:37] but I think oregano and tomatoes, a really good combo. 但我觉得牛至和番茄是绝配
[12:40] Nice little handful, into the flavor shaker. 抓一小把 放进调味罐里
[12:44] Nice pinch of salt. 再加一小撮盐

[12:50] I want to smash the oregano, I wanna get all the oils out of it. 我要把所有的牛至叶都碾碎 榨干最后一滴油
[12:54] And I want to make the most 我想做出史上…
[12:57] butt-kicking flavored oil. 最浓郁的调味油
[13:01] ‘Cause the thing is that when it comes to seasoning up flavor, 要注意的是 为了使味道丰富
[13:03] you can’t just chop it up and be nice all about it. 你可不能只是温柔地切开食材
[13:06] You have to bash it up. 要用力摇
[13:07] You have to make it a bit of noise. 很吵也没关系

[13:41] and this is gonna make the most beautiful flavoured oil. 这将成为最可口的调味油

[19:28] I’m gonna do a cross between a Spanish omelette and a frittata. 我打算做西班牙煎蛋卷和菜肉蛋饼混合体
[19:31] Spanish omelettes are generally finished on the hob, 西班牙煎蛋卷一般用铁架加工
[19:34] frittatas are finished in the oven, so they sort of souffle up a bit. 菜肉煎蛋饼则是用烤箱 所以会膨胀
[19:37] But I’m using chorizo. Chorizo, 而我打算用西班牙香肠
[19:39] erm, brilliant, you know. Quality pork, 它由味美质优的猪肉做成

[19:44] You know, if you get a good one, 在高质量的香肠里
[19:45] you’ve got good quality fat in there, herbs, 会有适量的肥肉 植物香料
[19:48] secret ingredients, smoked paprika, which I love to bits. 秘制香料 熏辣椒 这些都是我的心头好
[19:51] And what I’ve got in the oven is a pan, nice and hot. 我在烤炉里已经烧热了一个锅
[19:54] And… 然后…
[19:57] you get some oil straight in there, 直接倒入一些油
[20:00] right, and we go in there with the chorizo… 再加入西班牙香肠
[20:04] and then in with the potatoes. 再加上土豆
[20:08] Give it a toss about, 翻一下
[20:10] and the great thing is, you can see already, 最奇妙的是 就能看到
[20:12] the paprika starts cooking out of the sausage. 辣椒的香味已经从香肠里透出来了
[20:16] And that gives it a wonderful flavour. 使整道菜的味道更美妙
[20:18] You can see I’ve done in the wood oven, I’ve just put it on some coals. 你看 我把它放在烤炉的煤炭上
[20:21] If you’ve got just a normal oven, 如果你只有普通的烤箱
[20:23] whack the oven on full 把火力开到最大
[20:24] whack and do exactly the same, no difference. 步骤是一模一样的 没有区别
[20:28] And now I’ve got some rosemary. 还要加些迷迭香
[20:29] Now, rosemary, chorizo, pork, potatoes, brilliant friends. 迷迭香 西班牙香肠 猪肉 土豆 相得益彰
[20:34] So a little pile of that… 准备一些迷迭香
[20:37] Lovely. 很好
[20:38] So…got some lovely eggs. 再打几个蛋
[20:43] Right, so I’ve got a bowl. 取一只碗
[20:44] I’m gonna use three eggs, nice large eggs. 我准备用三只新鲜的大鸡蛋
[20:48] You can see, look at the lovely yellow yolks in there. 看蛋黄多漂亮
[20:53] So, three eggs, 打三个蛋进去
[20:54] little pinch of salt, 加一点盐
[20:56] little pinch of pepper, give it a little whisk up. 一小撮胡椒粉 稍稍打散
[21:00] You can see the lovely colour. 这颜色真好看
[21:03] And then you got lovely chorizo and… 再加上美味的西班牙香肠
[21:07] you know, the potato. I mean it’s all the things you love, right? 还有土豆 这都是最受欢迎的食材
[21:09] Sausage, potato, eggs. 香肠 土豆和鸡蛋
[21:14] Look at that. 看
[21:15] You’ve already got a nice colour. 已经变色了
[21:17] Delish. 好馋人呐
[21:19] So what I want to do… 接下来要做的
[21:22] ..is just maybe flick off some of these. 就是把它们倒出来
[21:27] Right, and in the pan here, 在锅里还有
[21:29] you’ve got the fat in there, right? And that’s good stuff. 炸出的油 这可是好东西
[21:32] I’m gonna literally sprinkle that in, 撒入迷迭香
[21:36] and soon as that goes crispy, which is in about 15 seconds, 15秒左右 它就会变得酥脆
[21:40] it’s snappy and meaty and steaky and delicious and fragrant. 吸饱了肉香 香味四溢
[21:44] So literally do that, keep some in, 倒一些出来 留一些在锅底
[21:47] and I’m gonna just pour in the eggs, 把蛋液倒进去
[21:51] like that, 就像这样
[21:52] and then flick all my bits of 再把这些零碎的
[21:55] sausage and rosemary… 香肠和迷迭香
[21:58] back into this little darling. 扔回锅里
[22:00] Rosemary’s important. I mean, just great flavour. 迷迭香很重要 味道独特
[22:03] It’s looking good. Straight into the oven. 看起来很不错 可以放进烤炉了
[22:07] And, again, because it’s got heat coming from above and below, 因为上下都在加热
[22:11] it’s more like when you do a souffle. That’ll almost double in size, 和舒芙蕾一样 所以体积会膨胀成两倍
[22:14] and there’ll be bubbles and stuff like that. 还会起很多气泡
[22:16] So, while that’s cooking, I want to do a salad, 在等待的时候 我打算做个沙拉
[22:18] but not a conventional salad. I wanna big-up parsley. 不是传统的那种 取一根大欧芹
[22:21] Try not to use the really big leaves, 扔掉老叶子
[22:24] get rid of any big stalks, 再去掉粗杆
[22:26] like that little fellow, he can go. 比如这一根 可以直接丢掉
[22:29] Then I’ve got a shallot that I’ve just pulled out of the garden. 我刚从菜圃里拔了一根红葱
[22:31] And take the end off, take the end off, 把上下两头都切掉
[22:36] peel the old fellow. 剥掉最外层的老皮
[22:39] Thick, chunky bits of onion in anything, 任何菜里一旦有大块的洋葱
[22:41] I don’t care who you are, are horrible. 不管是什么菜 都太可怕了
[22:43] But if you start getting it wafer-thin… 但是如果把它切成小薄片
[22:50] ..It’s delicate and beautiful. I don’t want to eat a whole onion, 就很精致可口了 我可不想吃整颗洋葱
[22:53] so just that much is enough in there, 所以放这么多就够了
[22:57] and sort of concentrate on these onions for a bit. A bit of salt, 然后加工一下洋葱 加点盐
[23:00] bit of lemon, 再加一点柠檬汁
[23:02] and that parsley will really need this lemon juice, 欧芹很需要柠檬汁相佐
[23:05] otherwise it is just a herb, yeah? 不然就只是一棵草
[23:07] Olive oil… 倒上橄榄油
[23:08] and let’s just dress this little bubba. 然后用它来装饰我们的美味佳肴
[23:11] But just before we dress it, sort of pinch that lemon juice, 不过在此之前 还要让柠檬汁渗入调料中
[23:13] pinch it into the salt, 把盐抓散
[23:15] really get the salt and lemon juice into it, 让它们混合在一起
[23:17] and that’ll take the thing out of it, 使味道充分发挥出来
[23:19] and then bring the parsley in, right, 最后混入欧芹
[23:23] mix that up, have a little taste with a bit of onion. 充分搅拌 和着洋葱尝一下
[23:31] Delicious. You wouldn’t want a whole bowl, 美味呐 你不会想吃一大碗
[23:32] absolutely not, this ain’t a green salad. 绝对不会 这又不是蔬菜沙拉
[23:35] But watch this. 但接着看
[23:37] My boy here, comes out of the oven. 这锅刚出炉的美味佳肴
[23:41] Give him a little slap, 轻轻敲一下
[23:43] fold him out, light, fluffy, 把它倒出来 轻盈蓬松
[23:48] absolutely delicious. 绝对可口
[23:50] Get my lovely parsley… 抓一把欧芹
[23:55] ..Like that, 这样铺在菜上
[23:57] and for me that’s what cooking’s all about – exciting stuff real deal. 做菜就应该这样 色香味俱全
[24:01] Although that’s not authentic Spanish, 虽然这不是正宗的西班牙菜
[24:02] if I gave that to a Spaniard, he’d give me a little, “Ole”. 但让西班牙人品尝 他一定会说”超赞”
