[02:53] while it’s cooking, I want to make a beautiful dipping sauce. 一种美味的蘸酱

[02:58] So just zest about half an orange, 削约半个橙子皮
[03:01] five or six swipes into there, 拍到碗里

[08:23] So this is what I want to do. First of all, 这就是我要做的
[08:25] I’ve got my pheasant here which has been spatchcocked. 首先 把野鸡剪开
[08:27] Now, I’ve done that to make sure this bird cooks 是为了让它和其它小型鸟
[08:31] around the same time as the smaller birds. 烹煮相同的时间
[08:34] And spatchcock means basically opened out like a book, like this. 剪开后像一本摊开的书
[08:37] And I wanna cut it up later anyway. 之后还是要切块
[08:38] So I’ve got this guinea fowl here, and literally all you do 这只珍珠鸡

[08:46] you’re cutting away where there’s no meat anyway, so it’s not leg 只要把没有肉的地方切掉 所以不是腿

[08:55] you’re probably better off getting your butcher to do it anyway, 也许让屠夫帮你

[08:59] Once you take that bit of backbone out, 取出脊骨
[09:03] just press it down like this to flatten it out. 把它按平

[09:12] I’ve got my pigeon here, I’ve got my partridge there 鸽子 鹧鸪
[09:16] and I’ve got four lovely little quail which are lovely to eat. 还有四只可口的小鹌鹑
[09:19] Now, I want to do some basic seasoning here. 先做一些基础调味
[09:21] So rosemary in each, 往每只鸟里放上迷迭香
[09:24] little bits of rosemary just in the cavity, 塞进内腔
[09:26] and you can put bits of orange zest in there, 还可以放点橙皮
[09:28] bits of lemon zest in there, bits of garlic, 柠檬皮 少许大蒜
[09:31] you know, a little bit of thyme. It’s all flavour. 再来点百里香 都可以增添风味
[09:32] It’s all gonna steam inside there while it’s roasting 烧烤时香料都会蒸进去
[09:35] and it’s gonna do nothing other than improve the flavour. 使烤肉更美味
[09:38] So, what I want to do now is get these birds in here. 把鸟肉放过来
[09:40] Look how lovely they look. 看起来真棒
[09:42] And then what I want to do 现在我要
[09:43] is just get some basic flavours happening. 做一些基础调味
[09:45] I’ve got this sausage here 加入一些香肠
[09:47] with nice chunky bits of herb in there and fat and meat. 撒上些香草
[09:50] Bay leaves, lovely nice flavour. 月桂叶的味道很妙
[09:52] Bay’s brilliant with game, I think, really, really nice. 很适合烤野味
[09:55] Lots of rosemary, get some nice big splits in and around, 大量迷迭香撕成片
[10:00] get it all in there. 全放进去
[10:01] Then season it with pepper, 加入胡椒和
[10:04] a really good seasoning with sea salt. 调味圣品海盐
[10:07] And then, of course, to transmit all that flavour, 为了融合味道

[10:33] So we’re gonna cook this for about an hour, hour and a half 大约烤一个半小时

[10:40] What we’re looking for, slowly cooked, 我们要的是

[10:53] Now, what I’m gonna serve with that, 同时我还要做

[10:59] So I’ve got two litres of water boiling here. 两公升水煮沸
[11:03] I’m gonna add 500 grams of polenta. 倒入500克玉米粉
[11:05] You can buy it everywhere and it’s a form of 到处可以买到
[11:07] dried and milled corn, essentially, 实际上是风干磨碎的玉米粉
[11:10] classically from the north of Italy. 意大利北部的经典口味
[11:12] Get a whisk or a spoon and just whisk that in. 用搅拌器或汤匙搅匀
[11:16] So, as soon as you put that polenta in, if you see 玉米粉放入后

[11:20] and it’ll start going thick straight away. 立刻变得粘稠了
[11:22] Now we wanna keep it on a low heat. 保持低温加热
[11:24] I’m gonna put a lid on it because 盖上锅盖

[11:29] So 50 minutes for the polenta, just simmer it slowly 玉米糊要煮50分钟 文火慢炖

[11:35] And then the roast birds, just give them some love. 烤小鸟要多注意

[12:15] Now, you’ve got all that lovely veg here in the bottom, 烤盘底部的蔬菜

[12:22] We put that straight onto the charcoal. 直接放到木炭上
[12:24] We get it sizzling… 煎得嘶嘶作响
[12:27] and then we add a couple of glasses 然后加入
[12:30] of reasonably half-decent Chianti, nothing too expensive. 几小杯勤地酒 不算贵
[12:34] I just want the bare stickiness at the bottom 没过底部就好
[12:36] to boil with the initial freshness of the onions 和新鲜的洋葱
[12:39] and the celery and all those things. 芹菜等一起烹煮
[12:40] If you want to sweeten it, 如果想要甜一点
[12:43] you can just put a little knob of butter into it here, 可以加入一小块黄油
[12:45] and it’s funny, you know, the sweetness of butter 这很有趣 黄油的甜度配上
[12:47] along with that lovely red wine flavour is fantastic. 红酒的香醇 非常神奇

[12:56] Now, on the polenta, this is how it’s looking. 玉米糊成了这样

[13:21] So what I’m gonna do is add some butter and I want to add about three ounces of butter 加约三盎司黄油
[13:26] and then just beat that in, and all of a sudden, it’s loosening. 搅拌开 玉米糊就
[13:30] It’s loosening and it’s melting and it’s, you know, 软化下来 变得松散
[13:34] look like the butter and the polenta 玉米糊和黄油看上去是
[13:35] are almost the same colour. Absolutely lovely. 一样的颜色 绝对养眼
[13:37] Then we need to season it with salt, 加入些盐调味
[13:40] right, but not too much salt because 但别放太多
[13:42] I want a massive handful of Parmesan, and a real big one, like that 因为还要加一大把意大利干酪 像这样
[13:47] straight in there and then stir that in. 直接撒进去 搅拌
[13:50] Literally beat that in, 充分搅拌开
[13:53] and that’s pretty much perfect. Now, 已经很完美了
[13:55] when I’ve gone to really beautiful farm family places in Italy 我在意大利拜访公寓家庭时
[14:00] they bring out a nice big chopping board, 他们拿出精致的大切菜板
[14:03] they then get the polenta and they pour it over it, 像这样把玉米糊倒上

[14:10] Now, I want to kind of smear this out to the edge of the board 把玉米糊抹到板的边缘

[14:42] You know, sausage, always a crowd pleaser, 香肠永远是宠儿
[14:45] and I think, you know, for me, 这道菜

[14:51] And then with this juice here, 再加上这酱汁
[14:54] just hold a little sieve on there, 放个漏勺
[14:57] and I want it to go over that lovely game birds 淋在美味的野鸟上

[17:10] Right, so I’ve got a great recipe 关于鹧鸪
[17:12] for these beautiful partridge I shot. 我有个很棒的食谱
[17:14] They’ve been plucked, they’ve been gutted, 拔毛去脏
[17:16] and what I’m gonna do is a little pan-cooked dish. 我要做一道锅煎美食
[17:18] So, back here, I’ve put a pan of pearl barley, 放一平锅珍珠米
[17:22] which is a really old English kind of carbohydrate, you know, 这是一种古代英式主食
[17:26] you do soups with them, stews with them. 可以用来做汤或者炖菜
[17:28] About 100 grams per person, 每人份约100克
[17:30] just boil it in salted water for about 在盐水中煮大概
[17:32] 50 minutes, just slowly, slowly. 50分钟 文火慢炖
[17:34] Before we get onto that I’m just gonna slice up a red onion. 准备鹧鸪之前 切一颗红洋葱
[17:40] I wanna make a stew. 我要做一道炖菜
[17:42] And a little vegetable strew to go with the partridge. 炖蔬菜配鹧鸪
[17:44] Now, I’m actually using frozen peas. 要用到冻豌豆
[17:47] When I grow peas here, 我在这种豌豆的时候
[17:49] I really do wanna get them for about 3 or 4 weeks of the year 三四周内就得采摘完毕
[17:52] and then they gone. 然后就没有了
[17:53] And frozen peas are fantastically sweet, 冻豌豆非常甜
[17:56] and this vegetable dish is all about 这道炖菜将会充满
[17:58] wonderful fragrance and sweetness. 美妙的香味和甜味
[18:00] So, slow cooking is where that’s could be act. 所以只有慢慢炖煮才能达到那样的效果
[18:02] Now, I’m gonna drain 把煮好的珍珠米
[18:06] the pearl barley here cos they’re ready now. 倒到漏碗里沥干
[18:10] Put the pan back on the heat. 把锅放回火上
[18:12] Don’t cook the hell out of it so it’s fluffy and spongy, 别煮过头 否则会变的太蓬软
[18:14] you want a bit of bite to it. 最好是带点嚼劲
[18:15] So I’m gonna let that steam for a bit, 放在一边冷却
[18:18] and then in this pan, put a nice bit of olive oil 平底锅里倒一点橄榄油
[18:21] and we’ll start frying 把洋葱放进去煎
[18:23] this onion in here, nice and slow like that. 像这样慢慢倒进去
[18:27] Now, look at these partridge. Nice size. 看这些鹧鸪 大小适中
[18:30] You know, I’ll recommend one per person or two if you are greedy. 我推荐每人一只 老饕可以吃两只
[18:33] You can roast them whole, absolutely. 当然可以整只拿来烤
[18:34] I wanna take them off the bone, it’s dead dead simple. 我要先去骨头 这很简单
[18:37] So, what you do is just push the legs down like that, 把腿拉下来 摆成这样
[18:40] put your knife there, 刀放在这
[18:42] slice down and then you can sort of tear it open 切下去 撕开
[18:46] and you’ll click a little bone in there, 会碰到一块骨头
[18:48] and then you can just whaz these little legs off straight away, 就可以直接把腿切下来了
[18:51] really easy, 非常简单
[18:52] so it’s like a little mini-chicken leg. 就像一个迷你鸡腿
[18:55] Do the same with this one. Cut down. 这边一样 切下去
[18:59] Just pull it – like that. 像这样撕开
[19:04] And there’s your second one. Nice bit of meat there. 第二个腿 很棒的肉
[19:07] When it comes to the breast, 处理胸部的时候
[19:08] right, it’s pretty lucky. 很幸运的是
[19:10] You’ve got a little bone, just find it with your knife 可以用刀找到一块骨头
[19:12] and just slice from the top of the breast right down, it’ll stop there 从顶部往下切
[19:16] and that’s where the wishbone is, 在叉骨所在的位置停下
[19:18] and then just run your knife beside that bone, 让刀滑过叉骨侧边
[19:22] cut up, 切开
[19:24] and there you’ve got the equivalent of your 得到一块鹌鹑胸肉
[19:27] lovely breast of chicken. 和鸡胸肉一样
[19:28] Do the same on the other side. 另一边也这样
[19:29] Now, of course, absolutely, 当然
[19:31] you can get your butcher to do this, 你也可以让屠夫完成
[19:33] but I’m just showing you because 我在这里展示是因为
[19:34] the same principle for this bird, 鹧鸪的切法
[19:37] the partridge, is exactly the same for guinea fowl, pheasant, 同样适用于珍珠鸡 野鸡
[19:40] chicken, even turkey which is a massive one. 家鸡 甚至是大型的火鸡
[19:42] Again, we’ll do the second one, leg off, take it out of joint, 第二只一样 腿切下
[19:46] just whip it straight off like that. 像这样直接切下

[19:59] Let’s have a little sesh on the breasts, straight down the bone, 再来处理胸部 切至骨头处
[20:03] and once you’ve done a few, you get quite fast at it 试过之后 你会越做越快
[20:06] and you get quite good at it. 越做越好
[20:08] Another breast. 另一块胸肉
[20:12] Lovely. 完美
[20:14] So I’ve got my two beautiful birds cut down, 这有两只鹧鸪 切出
[20:16] I’ve got four breasts and some legs, 四块胸肉和一些腿
[20:18] and what I wanna do here is just get the heel of your knife 现在用刀刃后端
[20:20] and get rid of these little ends of the legs. 把鹧鸪的脚去掉
[20:33] Now, in here, the onions are just starting to colour, 洋葱变色了
[20:38] and I wanna stop that at this point. 就可以停止加热
[20:41] What I wanna do is, I wanna add the pearl barley 加入珍珠米
[20:44] and then just pour in 然后倒入等量的
[20:46] about the same amount of peas as the pearl barley, 冻豌豆
[20:50] put this back on the heat 放回火上
[20:53] like that. And then with some vegetable stock 加一些蔬菜高汤
[20:55] or some chicken stock, you want to just cover it. 或者鸡汤 恰好没过即可
[21:01] Let them boil up. 煮沸
[21:03] You get the sweetness from the onions. You get the sweetness from the peas, 洋葱和豌豆煮出甜味
[21:06] and I’m gonna turn that into a delicious quick stew. 我将做出一道美味炖品
[21:09] So while that’s happening, 与此同时
[21:11] all I wanna do is get some oil in a pan. 在锅里倒油
[21:14] I wanna get these legs going, 现在来煎鹧鸪腿
[21:17] because the legs do need more cooking. 要多煎一会

[21:30] So, let’s get these lovely breasts. 鹌鹑胸肉
[21:32] I wanna season these up with some thyme. 用百里香调味
[21:35] You know, game and thyme, game and rosemary, 野鸟和百里香 迷迭香
[21:38] May or summer savory, sage 夏香草 鼠尾草
[21:41] all of those kind of robust, woody herbs are fantastic. 这些浓郁的草本植物是完美搭配
[21:47] This time of the moment seems particularly good. 感觉很棒
[21:49] And I’m just gonna chop it up. 把它们切碎
[21:54] The reason that I put these lovely legs, I put them in first 我把鹧鸪腿先放进去煎
[21:57] you could see how lovely plumping juicy they are now. 现在已经很多汁了
[22:00] And when they are going all over, 全部煎透的时候
[22:02] that’s when I’m gonna add these breasts. 就该加入鹧鸪胸肉
[22:06] Sprinkle the breasts here with the thyme. 撒上百里香
[22:11] Now, at this point, I’ve got some lovely chunky lardons 再加一些美味的
[22:14] of smoked British bacon. Lovely, straight in there. 英式熏培根丁 直接撒进去
[22:20] Bacon, smoky, game, very good friends. 培根 熏制 野鸟 绝妙的搭配
[22:24] Now, while that’s happening, 与此同时
[22:26] I’m gonna season these breasts with a little salt. 胸肉再用盐调味
[22:29] I’ll do the board in front of them as well, and then pepper, 刀板前部也撒上盐和胡椒
[22:33] and then I can just move these breasts to the board, 把胸肉放过来
[22:36] so they get equal treating. 这样两面都抹上了调料
[22:40] Now I’ve got beautiful colour on these legs 鹧鸪腿已经变成好看的颜色
[22:42] and some lovely colour on those chunky lardons. 熏肉丁也一样
[22:45] This is a time when I shake all that gear to one end 把它们弄到一边
[22:49] and then just angle it up and get that fat coming out, 把锅稍稍抬起 油脂会流下来
[22:53] get the breasts, just drag them through the lovely natural fat first, 在胸肉表面抹上天然油脂
[22:57] and we’re gonna cook them three minutes on the skin side 带皮的那面煎三分钟
[23:00] and about one minute on the other side. 另一面一分钟
[23:02] Look at that. 瞧瞧
[23:06] Really, really nice. Now, I’m gonna show you 非常完美 现在我将展示
[23:08] a little old-fashioned way of thickening a broth. 让肉汁变浓的老式做法
[23:12] So take yourself a nice knob of butter 切一块黄油
[23:15] and then a little teaspoon of flour, 放一小茶匙面粉
[23:18] and there’s a thing called a beurre manier, 有种东西叫面粉奶油糊状混合物
[23:20] and it’s almost like a raw roux, you know, 类似于生油脂面糊
[23:23] as in we’re using the flour to thicken things 面粉可以把东西变浓厚
[23:26] and the butter just to be the vehicle that melts inside the broth. 而黄油是融进肉汁的介质
[23:30] Now, the heat from my hand will 我手上的热量
[23:32] start to melt this butter a little bit, 使黄油微微融化
[23:34] and the flour will go into it. 面粉将融进去
[23:35] If you’ve got anything that needs a little thickening, 如果想让某样东西变浓
[23:38] this is quite a good way to do it. 这是个好方法
[23:40] So you can see now, it’s quite sort of waify and sort of brothy. 这时还是清汤寡水
[23:44] As soon as I start putting this in, 把黄油面粉块放进去
[23:45] you wait, it’ll start going opaque. 一会儿就会变浓
[23:49] So, while that pea broth is just thickening, 豌豆汤变浓的同时
[23:52] all I’m gonna do now is put some lettuce in and some rocket. 我还要加些生菜和芝麻菜
[23:57] In the old days before people even started eating lettuces as salads, 人们还没用生菜做沙拉时
[24:01] they would always cook it, and to cook lettuce is genius, 都吃煮生菜 味道很棒
[24:04] it’s brilliant, and you get incredible flavours from it. 难以想象的好味道
[24:07] So I’m gonna put them straight in. 直接放进去
[24:09] And that’ll wilt down straight away. 立刻就软下来了
[24:14] The sweetness from the peas is incredible, 豌豆的甜味很浓
[24:17] the lettuce is incredibly sweet, 生菜也很甜
[24:20] and then I’m gonna serve it up. 可以出锅了
[24:22] So just pour your pea stew in. 把豌豆炖菜倒进盘子
[24:27] Get your breasts, 把鹧鸪胸肉
[24:29] put them along there like that. 像这样放好
[24:32] There we go. 好了
[24:34] And get your nice legs. 夹出小腿
[24:39] Just line them up like that. 像这样排列
[24:42] And then all that lovely fat 最后把美味的肉油
[24:44] and the sort of lovely crispy bacon bits can go over the top, 和香酥的熏肉丁浇在顶部
[24:47] and that’s a really nice, beautiful stew of peas, pearl barley, 一道完美的炖菜 豌豆 珍珠麦
[24:51] wonderful partridge, 鹧鸪
[24:53] and you see you’ve got that lovely thick gravy. 还有浓厚的肉汁
[24:57] That breast there anyone that’s never tried game before would love, 没吃过的人都会喜欢这胸肉的
[25:00] and I think partridge is a really good place to start. 鹧鸪是个很好的开端
[25:03] Absolutely delicious. 绝对美味
