[02:43] What I’m going to do is I’ve got some garlic here. 我要做的是 我这里有几个大蒜

[02:48] Then, l’ve got four nice, big twigs of rosemary. 然后还要四支迷迭香
[02:52] Throw them in, we’ll pull them out later, 丢进锅里 稍后我们会拿出来
[02:54] to give it a lovely fragrance. 为了调香味而用

[07:46] have to cull probably 30, 40 deer a year. 挑出三到四十头鹿

[10:44] So, what l want to do is slice this up into quarters. 我要做的是将块根芹切成四块
[10:49] Then, once I’ve done that, 切好后

[13:22] You’ve got that fantastic flavour, brilliant with dark meat. 它那奇妙的香味恰好与黑肉相得益彰

[13:31] l’m just going to get my knife, 然后拿刀

[19:11] So, one rabbit, one hare and about 600 grams of venison, 一只兔子 一只野兔还有约600克鹿肉
[19:16] so really lovely, lean meat there. 这些都是非常棒的精瘦肉
[19:18] Over here l’ve got two red onions, finely chopped. 这边是两个切好的红洋葱
[19:23] Normally, with this sort of game people brown it off. 与这种野味搭配的时候通常要炒成棕色的
[19:26] What l actually want to do is do the opposite, 这与我的想法正好相反

[19:29] l want to show how incredibly sweet 我想让你们知道

[19:38] Keep everything around the same size as the meat really. 所有材料都保持跟肉丁差不多大小

[20:53] and the bay l’m absolutely not going to chop up. 还有我不打算切碎的月桂叶
[20:58] So, get your herbs in there. 在锅里加入这些香草
[21:02] And then two or three bay leaves and then nice, generous, 两三片月桂叶 还有很多的

[21:33] and then at this point l’m going to bring it just to the boil. 之后就只需要放在火上煮
[21:36] Lid on top, and then we’re going to simmer that nice and slowly. 盖上锅盖 文火慢炖
[21:40] Let it blip away for around about an hour and fifteen minutes 让它慢慢沸腾约一小时十五分钟
[21:44] then l’ll do the pasta, that’s going to be incredible. 然后再做意大利面 这将会是人间美味

[21:55] Just under an hour and a half. You know you’re in for some fun. 炖了一个半小时 真将越来越有意思了

[22:46] and it knits together, really, really good. 变得粘稠 非常棒

[22:53] That pasta’s going to be nearly cooked, 意大利面快煮好了
[22:56] but what l want to do is l want a herb to lift it. 但我还想用些香草来提味

[23:00] l’m going to use a handful of parsley, like this, 像这样 取一把欧芹叶

[24:00] What l want to do is get a nice ladle of that sauce 我要取一大勺肉酱

[24:10] And I like the fact 我喜欢
[24:11] there’s lots of that greenery in there as well. 里面有很多绿色
[24:13] That’s going to work well with pasta. 它们跟意面是很好的搭档
[24:15] And that, is beautiful pasta and the sauce. 美味的肉酱面出锅了
[24:19] Keep tossing that pasta in on that sauce as you go. 一边盛一边还要继续搅拌意面和肉酱
[24:22] Look at that. 太棒了
[24:25] That is just delicious. 味道绝妙
[24:29] Finish that with a little bit of parsley like that, 最后以一点点欧芹碎
[24:32] some good olive oil. 和一些优质橄榄油来点缀
[24:35] Just a little bit of Parmesan, just like that, to serve. 再加上一点点帕尔马干酪 就像这样
[24:39] Eat it quick, you’ve got to eat it quick. And look at that! 你要快点吃完它 这样的美味
