[05:01] First, I’ve got a pan on, boiling, salted water, 首先 这个锅里有煮开的盐水

[09:19] With the big leaves I run my knife through it like this. 用刀把大叶子切碎
[09:22] With this bit of stalk here, just at an angle finely slice, 斜刀把西兰花的茎切成片

[09:27] stalk to cook at the same time as the pasta. 和意大利面一起煮
[09:32] This pasta takes 45 seconds to a minute to cook, 意大利面要煮45秒到1分钟

[13:01] So give it a really good whazz up. 充分地搅拌

[13:09] l want to add about 200 grams of golden caster sugar, unrefined. 我要加入大约两百克未精制的黄金砂糖

[23:07] l’m using bresaola, a cured meat, 我用的是牛肉片 一种加工过的肉

[23:12] You know, nice, rich, deep red colour. 好看的 丰润的深红色

[23:17] Then l want to wave the bresaola up a little bit. 我要把牛肉片放得立体一点
[23:23] And then, when it comes to these pancakes here, 至于这些薄饼

[24:05] er, lemon juice, which l think is delicious with fennel 一份的柠檬汁 我认为这与小茴香很搭

[24:11] And then the little weak here is l’m using truffle oil. 我有一个小妙招 就是用松露油
[24:13] Truffles are incredible. 松露是个好用的东西
[24:15] Costs about £15 for this bottle, 15英镑就能买一瓶
[24:16] and it will last you a year, easily. 至少可以用上一年
[24:19] Erm, and, you know, a lot of the gear 很多你在超市里买的
[24:22] that you get for three quid a bottle in supermarkets 那种三英镑一瓶的松露油
[24:25] isn’t really the real thing. 并不是真正的松露油
[24:26] They use different chemicals to make it taste like truffles, 他们用不同的化学物质使它尝起来像松露
[24:29] opposed for it being an infusion with truffles. 而不是用松露作为主要成分来制作
[24:32] But, either way, I think it’s quite an interesting commodity. 但不论如何 我都认为松露油很有意思
