[01:45] There’s different ways you can cook asparagus. 有好多种不同的做芦笋的方法
[01:47] I want to concentrate on some of the base, simple ways to do it. 我想着重介绍几种基本的 简单的方法
[01:51] What I’ve got is my ones first of all 我用我种的芦笋 首先
[01:54] going into boiling, salted water, a minute and a half. 用盐水煮一分半钟
[01:58] I’ve got thinner stuff 瘦一点的超市的芦笋
[01:59] here which I’m going to put onto the grill. 我准备放到烤架上烤
[02:02] I’m going to put it dry on the grill. 干干的放在烤架上
[02:04] When you put oil on, it caramelises too much and goes bitter. 如果涂油 会过多焦糖化 味道变苦
[02:08] Just put a bit of weight on there, like that. 稍微压一下 像这样
[02:14] And that’ll start toasting the asparagus. 芦笋就开始烤了
[02:17] Now, the wicked thing about that is you bring out nutty flavours 这种做法的精妙之处就是能带出坚果香味
[02:20] which you never really 用煮或蒸或炒
[02:21] get from boiling or steaming or stir frying. 是不可能达到这种效果的
[02:24] Really interesting. 非常有意思
[02:25] With the white asparagus, trim off at the bottom. 白芦笋的做法 根部修剪一下
[02:28] Peel them because they’re a bit tough here. 削去下端的皮 因为这里有点硬

[02:33] These sit in the bottom of the pan, 立在锅底上

[02:45] I’ve cooked them, the reason I’ve already cooked them 我已经做好了 我提前做好

[02:50] Boil it in salted, boiling water, standing up for five minutes, 在煮开的盐水中煮五分钟
[02:54] then turn it off and leave it for five, ten minutes. 然后关火 放置五到十分钟
[02:57] Now, we’re going to flavour them basically now. 现在我要加点基本的味道

[03:07] the white asparagus is a flavoured butter, OK. 做白芦笋
[03:10] So, in a pestle and mortar get yourself some mint leaves. 在研钵里放一些薄荷叶
[03:13] A pinch of salt for your seasoning, and pepper. 一点盐调味 还有胡椒
[03:17] Give it a really good bash up. 尽量用力碾碎捣匀
[03:21] It takes no time at all. 几乎不花什么时间

[09:00] I’m just going to blanch them in boiling, salted water 用煮开的盐水把它们煮到发白
[09:03] for about two minutes. 大约两分钟
[09:06] A really quick recipe and literally comes together 这个菜做起来真的很快
[09:09] in around about that time if I pull my finger out. 只要我不磨蹭一会儿就做好了

[09:14] Look at this pastry, it’s filo pastry. 看这个油酥面 这是薄酥皮
[09:16] You can get it in every 你可以从任何一家
[09:17] half-decent corner shop, every supermarket. 稍微地道一点的街头小店或者超市买到
[09:20] The lovely thing is the texture, 它的美妙之处在于质地
[09:21] you get incredible crunch from it. 能产生美妙的酥脆感
[09:23] It’s wafer-thin like that. Really, really delicate. 极其的薄 非常非常精致
[09:28] What I want to do is just melt a quarter of a pack of butter 我准备融化四分之一包黄油
[09:32] and just do a little bit of wallpapering. 像糊墙纸一样
[09:35] And then, lay it sort of in and slightly over. 然后摊进模具 边上多出一点
[09:38] Have about an inch hang over the side. 大约多出边缘一英寸

[10:11] You want to work pretty damn quickly with filo pastry. 做薄酥皮要非常快
[10:14] It’ll start to dry and get fragile and then start snapping, 因为它很快会变干变脆 然后就会碎

[10:19] The trick if you’re not a quick worker, 如果你动作不够快 那么技巧是

[11:11] So, in this bowl I’ve got 100 grams of grated cheddar. 碗里放100克碎切达干酪

[11:28] So, about a 100 grams of Lancashire cheese. 用大约100克兰开夏芝士
[11:31] Get that in there and mash it up. 放进碗里 碾碎
[11:33] Just sort of mix the cheese into the potato. 把芝士与土豆混匀
[11:37] Then, absolutely as if you were doing a mash, you know, 就好像做土豆泥一样
[11:40] you want a nice big pinch of pepper, pinch of sea salt 一大撮胡椒加一小撮海盐
[11:45] and then a couple of rubs of nutmeg. 一点擦碎的肉豆蔻
[11:51] And then, get that mashed in. 然后混匀
[11:55] Then, up here, l’ve got half a pint of double cream. 这边 我用半品脱高脂厚奶油
[12:00] lf you can get Jersey cream 如果你有新泽西奶油

[12:10] Cooks tend to put a lot of cream and milk 厨师喜欢往土豆泥里

[13:01] with the tip of the asparagus and turn it round the other way. 正一个 反一个
[13:05] That way, everyone gets a fair bite of the dish. 这样每个人分到的都很均匀
[13:08] That’s pretty damn good. 很好

[13:38] l want to whack that in the oven for about 1 5 to 20 minutes 我要把它放在烤箱中15到20分钟

[14:12] lt’s quite helpful if you use a cheesecake mould 你最好用一个做芝士蛋糕的模具

[17:34] lt all adds to the excitement of eating asparagus l guess. 我想这让吃芦笋更有意思了
[17:49] l’ve got my asparagus freshly picked, 我新摘了一些芦笋
[17:51] within the hour l’m going to cook it. 一个小时内我会用到它们
[17:53] What l wanted to do was a 我要做混合烧烤
[17:55] mixed grill but instead of meat, l wanted fish. 但不是烤肉而是烤鱼
[17:57] All you do is to go to your fishmonger, 你只要去找到卖鱼的

[18:02] Get him to fillet it. l’ve got a red mullet fillet. 让他帮你把鱼切片 我有红鲱鲤鱼片

[18:51] lt’ll look beautiful and normally when you do squid 它看起来会很漂亮 通常烹饪鱿鱼时
[18:54] you’re going to toss it in olive oil, lemon juice, herbs. 需要加橄榄油 柠檬汁和一些调料
[18:57] lt helps the sauce or juice stick to it. 而这可以帮助鱿鱼入味
[19:00] So, line these up in order of cooking time. 把这些根据烹饪时间排列好

[19:24] You don’t have to, but if you’ve got any herbs in the garden, 你不一定要种香草 但如果你种了

[19:31] That’ll flavour the oil straightaway. 这些都会给油调味
[19:33] So, the first thing that oil’s going to get is wonderful oregano. 首先要加到油里的是牛至

[19:42] The sea bass skin side down, get that oil. 鲈鱼片鱼皮朝下 放在油里
[19:46] Kind of hold the fish down so it doesn’t bend. 往下按住鱼片以免它卷起来
[19:50] Then, the red mullet can go next. 接着就可以放鲱鲤了
[19:53] We’re talking about three minutes start to finish here. 只用三分钟就可以了
[19:58] The old legs straight in there. 把鱿鱼脚直接扔进去
[20:01] Look at them, all curling up. 看看它们 都卷起来了
[20:04] We can get rid of this 现在可以把牛至扔了
[20:05] oregano now because it’s sort of done its job. 它们要做的事已经做完了
[20:09] Scallops go in, scored side down. 将扇贝放入锅中 打了花刀的部分朝下
[20:14] Then, get the old squid scored side down. 接着放入鱿鱼 划开的一面朝下
[20:19] So beautiful, exciting cooking happening. 太漂亮 太让人激动了
[20:22] At this point, we can get our lovely asparagus. 现在我们可以拿出我们的芦笋了
[20:25] This has been washed already. There’s a bit of moisture in there. 它们已经被洗过了 所以有点湿
[20:28] Just try and toss them around in that oil a little bit. 试着把它们放到油里
[20:32] The thing about cooking fish and cooking it well, 做鱼和芦笋这道菜的诀窍就是
[20:35] you don’t want to move it round much, 别总挪动它们

[20:48] Also, l have an addiction 我非常喜欢辣椒
[20:50] so l can’t help myself, get it sliced up. 所以我控制不住自己 辣椒切丝
[20:55] And then, if you look at that fish at the moment 然后看看鱼片怎么样了
[20:58] you can see the heat creeping up the fish 你可以看到鱼片被慢慢加热
[21:00] and you can see what’s cooked and what’s raw. 可以看出什么是熟的什么是生的
[21:03] We can see it, hear it, smell it. 不光可以看到还可以听到 闻到
[21:05] lt allows you to understand how quickly fish really does cook. 这让你明白鱼很快就会熟
[21:09] You don’t have to cook the hell out of it. 你不必把它烤得太死
[21:11] Let’s have a look what’s going on. 看看怎么样了
[21:13] Get our little fish slice, just very gently turn the fish over. 用我们烤鱼的小铲子轻轻把鱼片翻面
[21:17] Look at that colour, beautiful. 看这颜色 太漂亮了
[21:20] You can see here how the colour… 你可以看到这个颜色
[21:22] That’s raw there, that’s cooked there. 这儿是生的 这儿是熟的
[21:25] Literally, all we need is another 40 seconds on there. 通常我们只用再加热四十秒就好
[21:28] Turn over that sea bass, legs can go on top of the fish. 把鲈鱼也翻过来 鱿鱼脚放在鱼片上
[21:32] You don’t want to overcook it, let’s put the scallops on. 不用再加热它们了 扇贝也放上去
[21:35] Don’t overcook the scallops. 不要把扇贝烤过头
[21:37] Fish needs a bit more, squid can go on as well. 鱼还需要再烤一会儿 鱿鱼不用再烤了
[21:39] This is a show-stopper. 这盘菜完美的收尾
[21:41] Get your fish done, get the fishmonger to do it all. 让鱼贩子帮你把鱼准备好
[21:44] All l’ve done is chop up chili, put a pan on and olive oil, easy. 我只用切辣椒 放平底锅 加点儿油
[21:47] So, going to put that back on. 再把锅放到火上
[21:50] What l want to do now is over here get some nice fennel. 这儿我想找一点儿茴香
[21:54] Go for slightly lighter stuff, 选那些嫩一点的
[21:56] juicy stuff, really good with fish. 饱含汁水的 和鱼加在一起就太美味了
[21:58] And then, some thyme, just pull the tips off. 还有百里香叶 用它的芽尖就好
[22:01] The lovely thing about thyme tips is fresh growth 百里香的芽尖现在还很嫩
[22:04] and it’s the beginning of summer here it’s not woody. 现在还是初夏 它还没有长得太硬
[22:08] We can put this with fish, it’s great, really good. 它们和鱼搭配真的真的很好吃
[22:13] Give it a nice shake-up, that’s going to add flavour as well. 摇一摇 这也会提味
[22:16] Half the chili can go in, give it a shake. 放一半辣椒 再摇一摇
[22:21] That’s it, done. 好了 完工
[22:22] All l’ve got to do is plate it up. 我现在只要把它装盘就好
[22:27] The skin’s crispy. 鱼皮很脆了
[22:28] Beautiful bit of mullet. 漂亮的鲱鲤
[22:32] Have a scallop. 再加个扇贝
[22:36] A few of those legs. 还有一点鱿鱼脚
[22:39] Before l add asparagus, 在我加芦笋之前
[22:40] the pan’s been off the heat for 30 seconds, 平底锅已经离开或三十秒了
[22:43] squeeze some lemon juice in here. 加一点儿柠檬汁进来
[22:45] Give it a shake, that mixes up with the oil straightaway. 摇一摇 直接和油混合
[22:48] Almost like dressing a salad. 就像沙拉摆盘一样
[22:50] So, at this point, l can put a nice wadge 所以现在我可以把这一沓漂亮的芦笋
[22:53] of these fantastic asparagus over there. 放在上面了
[22:55] That’ll be enough for one person, but what l like to do 这些作为一人份已经足够了
[22:58] is serve this for two 但我想做两人份的
[22:59] people and put it in the middle of the table. 然后把盘子放在桌子中间
[23:04] Now, this squid, just cut it into little strips, 把鱿鱼切条
[23:07] becomes the most beautiful little thing. 它真是太漂亮了
[23:11] Put some of that on and all l do now 放一些到盘子上
[23:13] is that bit of natural juice on the bottom of the pan 现在我要做的就是浇上锅底的天然汤汁

[23:20] Then, just to finish it, some nice fennel. 最后再加一些茴香就大功告成了
