[04:08] it could be sunflower oil. 可以是葵花籽油
[04:10] You could use like a toasted sesame oil or a walnut oil. 也可以是芝麻油或者核桃油
[04:14] There’s many different types of oil, 很多食用油都可以
[04:16] but that’s your oil part, three part. 但油必须是三份
[04:19] And then one is acid, right? Three parts oil to one part acid. 剩下那一份就是酸 三份油一份酸
[04:24] That could be lemon juice, lime, it could be vinegar. 可以是柠檬汁 酸橙汁 还可以用醋
[04:27] It could be balsamic vinegar, grapefruit, orange, 香醋 葡萄柚 橙子也行

[04:37] The first dressing I’m going to make is 我要调的第一种沙拉酱是

[04:42] And, you know, it’s good to do it in jam jars. 这要在果酱罐里调制比较好
[04:46] You can store it in there, you can shake it in there. 方便储存 也方便摇匀

[08:37] However, rosemary tips finely chopped in a dressing, all right. 但是剁碎的迷迭香颗粒经过调味就可以

[09:05] I’m not going to make a dressing up in a jar, 我不打算在罐头里调味

[09:09] When you start making dressings for small amounts 如果需要调味的份量比较少
[09:11] or you’re used to it, 或者你只是出于习惯

[09:27] It can’t be a mixture, 不能是大杂烩
[09:28] bitter, crunchy, soft, you know? 不能是苦的 脆的或软的
[09:31] Nice bit of lemon juice. 多洒点柠檬汁
[09:33] I’m going to dress this with my fingers. 用手指来拌调味料
[09:35] If you imagine cooking on a barbecue a nice bit of tuna steak, 如果你想在烧烤的时候多做点金枪鱼排
[09:39] every mouthful of lovely fish the juices that come out, 希望每一口鱼块都是鲜美多汁
[09:42] the hit of that herb salad, 那么香草沙拉是绝对上选
[09:43] wicked, and the lemon’s making it work. 棒极了 柠檬汁就是锦上添花

[09:46] All I’m going to do now is cut up a ripe tomato quite crudely. 我现在要做的就是把熟西红柿随意切块

[11:12] All you’ve got to do is 你所要做的就是

[11:16] Sprinkle, sprinkle, bit of soil on top, bit of moisture. 都不用太多 稍微撒点土 洒点水

[11:24] As soon as that bud comes through, it’s easy. 一旦萌芽破土而出 后面的就好办了
[11:27] Just don’t over water it too much, and get it in a sunny place. 不要浇太多水 然后光照要充足

[11:36] I can grow the stuff that I grow. 就是我想种什么就能种好什么

[12:22] Rocket, few oak leaves, a bit of lamb’s lettuce. 有芝麻菜 少量橡树叶 和一点野苣
[12:28] A bit of soil over the top and that’s all I did, a little water. 只要在上面撒点土 再洒点水就行了
[12:32] And look, look what’s happened, 看 看这边发生了什么

[13:21] If fruit’s slightly under-ripe, it’s really good for cooking 如果水果不太熟 最好还是烹饪一下

[13:30] So, what I want to do is flavour that peach, 我要先给桃子调味

[14:24] get the flavour from the charcoal, right, 能从木炭里提取风味儿

[14:30] But, when you go to ltaly and stuff 但在意大利之类的地方
[14:32] they’ll just grill fruit like peaches and apricots and plums. 他们只会烤桃子 杏子和李子之类的水果
[14:36] And it’ll come off, when they put 他们会加点香草糖
[14:37] vanilla sugar on it and serve it with ice cream. 并配上冰淇淋 效果就出来了

[14:41] So, that’s going to colour up, and with these extra herbs, 稍放点香草在下面将更添色彩

[14:48] Right, l’ve got Bresaola. 对了 我这儿有牛肉干
[14:50] You could use Parma ham, you could use… 你可以用帕尔玛火腿 也可以用…
[14:52] This is a topside of beef cured, 这是熏制风干过的牛大腿肉
[14:55] dried. You can get it in all delis. 可以在任何熟食店买到
[14:57] And lay it out onto a plate. 把他们摆盘
[15:00] l mean, the Bresaola, you know, it’s salty, it’s savoury. 这些牛腿肉 很咸很开胃

[15:57] I wanna do tarragon, and l’ll tell you why, 我来告诉你原因
[15:59] because the Bresaola is beef, beef is steak. 因为用的是牛肉干 牛肉可做牛排
[16:02] Steak, classic French dish. 一道经典的法式牛排
[16:04] Béarnaise sauce, in Béarnaise sauce is tarragon. 用的是贝尔内滋酱汁 其中就有龙嵩叶
[16:06] l think it’s going to be delish. 绝美搭配啊
[16:11] What l want to do is a dressing. 我要做的就是调味
[16:12] l want to change the oil and lemon dressing. 这次我要改变一下橄榄油和柠檬的调味
[16:15] l want to vary it slightly 稍微调整一下
[16:17] and l want to do the creamy dressing, 用奶油来调味
[16:21] almost like a creamy French. 就像法式奶油一样
[16:24] So, what l’m going to do is have about 我要做的是加大概…
[16:27] a teaspoon of yoghurt, or you could use creme fraiche. 一茶匙酸乳 你也可以用鲜奶油
[16:32] Then l’m going to do three parts extra virgin olive oil. 接着加四分之三量的特级初榨橄榄油
[16:37] Still three to one, three 仍然是三比一
[16:39] parts good extra virgin oil, one part vinegar. 三份量的特级初榨橄榄油 一份量的醋
[16:42] Now, l’m using a nice red wine vinegar, still one part. 我用的是红酒醋 还是四分之一
[16:48] Pinch of pepper, bit of salt. 少量胡椒粉 一点儿盐
[16:53] Bash it in the flavour shaker, and l’m just going to shake it up. 放入调味瓶里使劲摇 摇一会儿
[17:01] Here we go. We’ve got the meat, 好了 这里肉摆好了
[17:03] let’s have a look at these peaches. 让我们看看桃子怎样了
[17:06] They’re drying on the outside 外壳已经烤干了
[17:08] but it’s almost bleeding with beautiful syrupy… 但还是糖浆四溢
[17:11] Look at that syrupiness, absolutely delicious! 看那里的糖浆 肯定美味无比
[17:14] That is why we’re grilling it. 这就是我们烤它的原因
[17:16] l could easily just put a fresh peach in there, delish. 我本可就放一个鲜桃上去 也挺可口

[17:41] Erm, let’s have a look at this. 让我们来看看这个
[17:46] Lovely. Got a nice dressing. 真棒 美味的调味汁好了
[17:48] Look how creamy that dressing is, just enough to dress it. 看这调味汁多么柔滑 量刚刚好
[17:52] Lightly dress it, use my fingertips. 用手指轻轻搅拌一下
[17:58] lt’ll stick to the rocket and tarragon. 它就会粘在芝麻叶和龙嵩叶上了
[18:00] l’m just going to pick it up nice and delicate 轻轻把它拿起来
[18:03] and put it just in the middle. 漂亮地放在中间
[18:07] lt’s such an exciting, delicious salad. 真是令人激动且十分美味的一道沙拉啊
[18:10] All l do to finish it off is break up some nice goat’s cheese. 最后再来点羊奶干酪收尾
[18:13] Feta cheese or something like that. 像羊奶酪之类的
[18:15] And that, l think, is a wicked salad, you know, dead nice. 这真是一份梦幻般的沙拉 美味至极
[18:19] And that, is one of my favourite, little salads at the moment. 它在这个时刻成了我的最爱
[18:25] That’s not just a side salad, that’s a snack. 它不仅可以做配菜沙拉 还可以当做点心
[18:28] Nice bit of bread, glass of good white wine. Really, really nice. 配少许面包 一杯白酒 妙极了

[18:39] l’ll tell you what l did the other weekend with the kids. 让我告诉你一个周末我和孩子们做什么了
[18:42] Dead simple, l got some mustard cress seeds. 很简单 我得到了一些芥菜苗种子
[18:45] You get them in pretty much any garden centre. 你可以在任何菜园中找到

[19:10] So l’m not going to cut this because it’s good stuff. 这些还没长好 先不摘它们
[19:12] But around here, you don’t have to just plant 但在这周围… 不要只想着
[19:14] blooming salad leaves in the vegetable patch, 把沙拉菜种在菜园里
[19:17] plant them where you like, so we’ve planted stuff with the girls. 想种哪种哪 上次和孩子们已经种好了
[19:21] You know, a few weeks ago once they were small ones. 要知道 几周前它们还是小菜苗
[19:24] This is a traditional one, this is cos, 这个可以摘了 这是莴苣
[19:27] erm, which l’ll just cut like that at the base. 在根部把它这样割下来就好
[19:32] Here we go. 好了
[19:33] Give it a wash, happy days. 冲洗一下 生活真愉快
[19:36] Right, so the last thing l’m going to get is, erm, some violas. 最后要摘的是一些堇菜
[19:40] These are probably the tastiest flower. 它们也许是最美味的花
[19:42] Japanese love these, they put them in little bowls of cold broth 日本人很爱吃 他们把堇菜用来做冷肉汤
[19:45] and into salads and over Sashimi dishes 做沙拉或者搭配生鱼片
[19:49] and stuff like that, proper nice. 或者其它类似的 很好吃
[19:54] 堇菜 最美味的花朵 深受日本人喜爱 可作肉汤 沙拉 生鱼片
[20:02] OK, right, so l’ve got all my beautiful cos lettuce leaves. 好的 这里有漂亮的莴苣叶子
[20:05] What l want to do is l’m going to do a Caesar Salad. 我要做的是恺撒沙拉
[20:08] l’m adapting it and l’m doing my version. 我改变了菜谱 做成了自己的版本
[20:11] And my version, my version is all about maximum flavour. 我的配方把味道极致化了
[20:16] Chicken legs. L ain’t interested in breasts, 用鸡腿 拉丁人喜欢鸡胸
[20:19] l’m interested in legs. 而我对鸡腿更感兴趣
[20:20] You can tell when a chicken’s good when you literally pinch it 用手直接捏肉就可以知道鸡是否熟了
[20:24] and if it comes off like that, happy days. 如果剥下来像这样 美好一天啊
[20:26] So sticky, crispy and lovely. 鸡肉汁多酥脆又可口
[20:29] But the trick was l bashed up a load of rosemary, erm, 诀窍就是我摏了许多迷迭香
[20:32] a bit of olive oil, salt, pepper, 一点橄榄油 盐 胡椒
[20:34] rubbed it over the chicken 把它们涂抹在鸡腿上
[20:35] and put it on top of some ripped-up bread. 再放在一些面包屑上
[20:38] What happens is, as the juices and fat cooks 当肉汁和油从鸡腿被烤出来后
[20:40] out of the chicken, it cooks into the bread. 就会浸入面包里
[20:43] Got all that chicken goodness. 面包就会溢满鸡肉的香味
[20:45] When you roast a chicken and 烤鸡肉的时候
[20:46] get that sticky marmite goodness you make gravy with 会溢出美味粘稠的肉汁
[20:49] that is in my bread, so ultimate, you know, croutons. 浸入面包里 最后就会变成烤碎面包块
[20:52] l haven’t diced it up because, you know, l’ve got a life really. 我没有用切的 是因为我太忙了
[20:56] l’ve torn it up, l think it looks much more rustic. 我用手撕碎 看起来会更质朴
[20:58] The other ingredient is 另外一个配料是
[21:00] smoked bacon or pancetta, it’s top, top drawer, 醺培根或意式培根 这是顶级的
[21:03] and you can literally just lay it, again, over the chicken. 直接铺在鸡肉上面
[21:07] We’re going to put it in just until golden. 烤到醺肉变成金黄色为止
[21:09] That’s going to go back in the oven. 放回烤箱里
[21:13] l think the original geezer didn’t put anchovies in it. 原始的配方没有放凤尾鱼
[21:16] l prefer anchovies, get yourself some good anchovies. 我喜欢凤尾鱼 请准备上好的凤尾鱼
[21:19] lf you don’t like anchovies, don’t put them in. 如果你不喜欢凤尾鱼味 就不要
[21:22] But, by the time l’ve finished with it you won’t taste it. 但做完之后完全尝不出味道
[21:25] lt’s just going to give you a beautiful salty seasoning. 只会给菜品增添咸味
[21:29] Erm, l’d use a pestle and mortar. 我要用一个杵和研钵
[21:32] You could do it in a liquidizer or a processor if you wanted to. 你也可以用榨汁机或加工机
[21:35] About two or three for six people. 用两三条就可做六人份
[21:38] You can use a bit of this oil, it’s generally just olive oil 可以倒一点油 其实就是橄榄油
[21:41] so not the really good quality olive oil 虽然不是上等质量
[21:42] but no point in wasting it. 但没必要浪费
[21:45] And garlic. 大蒜
[21:46] l think go pretty easy on the garlic. 大蒜很简单
[21:48] Half a clove, maybe even a quarter of a clove. 二分之一 要不就四分之一
[21:51] otherwise it’s going to be hot. 不然就会很辣
[21:53] You know how garlic can be really hot so that’s probably fine. 你知道大蒜很辣的 所以这样就好
[21:57] l’m just going to smash this up… 把它捣碎
[22:02] …to a pulp, to a mush. 捣成蒜泥
[22:09] l’m going to put a bit of creme fraiche, a little spoon. 加点鲜奶油 一小勺就好
[22:12] Not loads, just l want to make it creamy. 不要过多 有点奶油味就好
[22:16] l don’t know, l think it’s quite nice, OK, to just put it in. 我不知道 我觉得应该会很好吃 放进去
[22:20] What does it give? 有什么用呢
[22:22] l just think it like sticks, sticks to the leaves slightly nicer 我觉得它比较黏稠 能更好地黏在菜叶上
[22:26] and adds to the flavour of the whole thing. 也为整道菜增添了风味
[22:28] l want a good lemon, 我需要一个柠檬
[22:29] but you could use really good quality vinegar, 你也可以用特级醋
[22:32] and parmesan. 还有干酪
[22:33] So, finely grate like a little handful of parmesan. 轻轻磨碎少量的干酪
[22:39] You’re going to adjust this 用这些干酪
[22:41] parmesan with the oil and the lemon juice. 和橄榄油及柠檬汁调味
[22:43] This whole thing is about dressing. 调味是关键
[22:45] lf your dressing ain’t good to start with, 如果一开始没调好味
[22:46] it won’t be good when you put it on the salad. 你的沙拉味道也就没戏
[22:49] So, you know, if we’re, you know, 所以我们要…
[22:51] it’s all about blending it, really. 最关键的是要调和好
[22:56] There we go. 好了
[22:57] Right, so that’s looking pretty good. 好的 看起来不错
[23:01] So, it’s like a dry slop now. 现在看起来像干糊
[23:07] Lemon juice. 柠檬汁
[23:14] So, olive oil. 橄榄油
[23:18] Again, three parts olive oil to one part lemon juice. 同样 三份量橄榄油以及一份量柠檬汁
[23:23] l’m not going to season it 我调味时不会加盐
[23:24] with salt because we’ve got anchovies in there 因为已经加了凤尾鱼
[23:27] and we got the parmesan. 还有干酪
[23:31] l think that’s pretty good actually. 这样味道应该很好了
[23:33] You want that balance of the hum of garlic, 你想要平衡大蒜的辛辣
[23:36] the roundness of parmesan and oil. 干酪和橄榄油的奶滑
[23:38] But, you want that cut of the lemon or vinegar. 就需要用柠檬或醋的酸味调和
[23:41] lt’s got to cut through a bit, yeah? So, here we go. 必须要调和一下 调好了
[23:53] ln this bowl, l’m going to do a Caesar Salad, modern day style. 用这个碗来做凯撒沙拉 现代时髦
[23:58] l’m going to just tear it up and leave the smaller leaves whole. 把大菜叶撕一下 小的直接放进去
[24:08] Now, let’s check my chicken. 现在检查一下鸡肉
[24:19] As you see, l can tear this chicken. 你也看到了 我可以把鸡肉撕下来
[24:21] You don’t have to do it any neat way. 不用撕得很整齐
[24:24] Just get that lovely meat off the bone, sort of shred it. 把美味的肉剔下来 撕碎
[24:27] All l’m going to do is 我需要做的是
[24:29] just run my knife through it just a few times. 用刀切几下
[24:32] Delicious. 美味极了
[24:34] The croutons you can just 烤面包块你可以
[24:35] roughly chop up or snap at with your fingers 简单切几刀或用手撕碎
[24:38] and for this particular one, the skin’s really crispy. 这几块面包真是烤得又酥又脆
[24:49] lt can go in warm so it’s 还是热的
[24:51] essentially even a warm salad now and… 所以现在成了温沙拉
[24:59] Just enough, don’t want it to be ultra heavy. 够了 不要让菜过于厚重
[25:02] Dressing it like we did the other things. 像之前一样搅拌均匀
[25:04] Let’s have more breadcrumbs.’Cause that is delicious. 再加一些面包块 因为太好吃了
[25:08] Snap them up, lovely. 撕碎 太赞了
[25:11] But, this is the sort of thing… 但这么大盘…
[25:14] You know, if you’re going to, if you’re going to be camp about it 如果你要… 摆上餐桌
[25:18] just put it like that. 像这样摆盘就好
[25:23] Finish with a few bits of nice parmesan. 最后再来点美味的干酪
[25:28] Don’t waste those lovely little camp violas, which l’m all into. 别忘了这些美丽的堇菜 我的最爱
[25:33] When you’ve got someone important coming around, 当家里来贵客时
[25:34] burd, boyfriend, marveling or whatever 男女朋友或者其他人
[25:36] everyone’s always racing to do like flash stuff. 人人都想做出自己的拿手好菜
[25:39] Do a Caesar Salad but make it the best one they’ve ever tasted. 做出一道别人吃过的最美味的恺撒沙拉
[25:43] Make that chicken delicious and sticky and crispy-skinned. 把鸡肉做得多汁酥脆可口
[25:46] Make the breadcrumbs and 烤面包块和调味
[25:47] the dressing just punch you around the face. 做得拍案叫绝
[25:50] Delicious. Good stuff. Really impressive. 好吃 味道棒极了 令人印象深刻
