[06:41] | That’s because you only had ’em in season, | 因为那是只有一个季节出产草莓 |
[06:43] | but all now we have strawberries all year round, | 但是现在 我们全年都可以吃到草莓 |
[06:46] | and most of them have come thousands of miles, | 而其中的大多数都来自千里之遥的地方 |

[06:50] | So l want to show you how to plant them. | 所以我想让你们看看如何种植草莓 |
[06:52] | It’s dead simple. | 简单极了 |
[06:53] | And want I want to do is to build a bit of | 现在要做的是 |
[06:56] | a ridge just into the middle like that… | 在这中间堆一个小土脊 |

[07:03] | Now, you generally want to plant about | 一般情况下 |

[08:42] | So it’s quite nice in the garden to have a little mixture | 所以在花园里同时混种上 |
[08:44] | of your regular big hybrids, big juicy old things, | 这种大而多汁的普通杂交品种 |

[09:19] | And l’m gonna do some home-made jam, | 我还要做点自制果酱 |
[09:21] | as l’ve got the strawberries in the garden. | 因为有花园里的草莓 |
[09:23] | l’ve got a kilo here, l need another kilo. | 这里有一千克 还需要一千克 |
[09:26] | Jam’s a funny one, | 果酱很有意思 |
[09:26] | l used to make it with my mum when l was a kid. | 我小时候跟妈妈一起做过果酱 |
[09:28] | And she used to make great jam, and it used to last a long time. | 她做的果酱棒极了 而且能保存很长时间 |
[09:32] | She used pectin sugar, which’s a sort of natural fruit thickener, | 她用的是果胶糖 天然的水果增稠剂 |
[09:36] | but we’re not gonna use that, | 但我们不会用那个 |
[09:38] | and she used equal quantities of sugar to fruit. | 而且她用的糖和水果是等量的 |
[09:41] | But l do my jam slightly differently. | 而我的果酱会有些许不同 |
[09:44] | And the trick is you don’t want the jam to last forever, | 因为我不想让这果酱拥有永久保质期 |
[09:47] | you want it to last just until next year. | 只要保存到明年就够了 |
[09:49] | And so less sugar, less cooking, | 所以少放糖 少加工 |
[09:52] | and you get something that | 你会得到的 |

[11:50] | With pudding rice I just fill up one cup, | 只倒一杯大米即可 |
[11:53] | and the thing I love about it, actually, is, | 实际上 我喜欢的地方在于 |
[11:56] | to one cup of rice, you know, | 只用一杯大米 |
[11:59] | you can feed four greedy people or six normal people. | 就可以喂饱四个饥饿汉或六个不饥不饱的人 |

[12:08] | I’m gonna add five times milk. | 要加五倍的牛奶 |

[12:23] | So once you’ve got the milk in there with the rice, | 大米中加入牛奶以后 |

[12:27] | You could split this vanilla pod, | 你可以把香草荚撕开 |
[12:28] | put the seeds and pod in there and simmer it up. | 种子和豆荚放进去炖 |

[12:32] | But what I do is that every year I get like ten of these, | 我的做法是每年取十根香草荚 |
[12:35] | whazz it up in a food processor with a couple of kilos of sugar, | 放到食品加工器里 加两公斤糖 |
[12:38] | and make my own vanilla sugar. | 制作我自己的香草糖 |
[12:41] | And if you smell it, it smells fantastic. | 闻一闻 味道好极了 |
[12:43] | So all I want to is just to sweeten it a little bit, | 现在要做的就是增加一点糖度 |
[12:45] | so I’m gonna put two heaped dessertspoons in. | 我要加满满两点心匙的糖 |
[12:48] | I don’t want it to be really sweet sweet cos my jam’s going with it. | 我不想让太太甜 因为果酱不需要太多糖 |
[12:52] | You can bring this up to a simmer, | 先是大火炖制 |
[12:54] | then turn it down to a medium, medium-low simmer. | 然后调到中火 中低火 |
[12:57] | I’ll put the lid on top, as well. So keep an eye on that. | 还要盖上盖子 注意看着锅 |
[13:01] | This over here, you can see all the foam’s come to the top. | 这边 可以看到泡沫都涌到上面了 |

[13:06] | Every couple of minutes, every five minutes or so, | 每过几分钟 比如五分钟 |
[13:09] | come back to your jam, give it a little skim. | 过来看看果酱 撇去浮沫 |
[13:14] | So, very simple. Fresh jam on, about half an hour on a medium heat. | 就是这么简单 新鲜果酱 中火加热半小时 |
[13:18] | And my lovely rice pudding, 20 minutes or so on a medium-low heat. | 美味的大米布丁 中低火加热20分钟左右 |

[13:43] | You know the weird thing is, right, | 你知道吗 奇怪的是 |
[13:44] | that’s only 150 grams of sugar per kilo of strawberries, | 每公斤草莓只用了150克糖 |
[13:47] | but I can’t imagine wanting any more sugar in that. | 但是不能再加糖了 |
[13:50] | That is lovely. Sort of tiny bit of sourness, but beautifully sweet. | 很美味 有一点点酸 但是甜得可口 |
[13:55] | And look at the rice. | 再来看大米 |
[13:58] | You can see it’s quadrupled in size. | 可以看到体积变成了原来的四倍 |
[14:02] | Rice is really thick, and…well, | 大米真的很稠 |
[14:04] | thick but also creamy. Really nice. | 粘稠而且像奶油一样 非常棒 |
[14:07] | If you want it a little thinner than that, | 如果不想那么粘稠 |
[14:09] | you know the five to one does definitely work, | 五比一的比例当然可以 |
[14:12] | but you know different rices vary a little bit, | 但是各种大米也略有不同 |
[14:15] | and all you have to do is just tweak it with a little milk. | 需要做的只是加点牛奶调和一下 |
