[02:31] Now, for this dish I’m going to use a pestle and mortar, 做这道菜 我会用到捣槌和石臼
[02:34] equal quantities of peas and broad beans, 等量的豌豆和蚕豆
[02:37] a little handful per person. 一捧的量为一人份
[02:39] To go with this is, like, 与之相搭配的是

[02:43] So just, like, five, six sort of mint leaves per person. 一人份需要五六片的薄荷叶
[02:48] Literally, all I’m going to do is bash it up. 我要做的就是用力捣碎

[12:40] Just sort of, so you can heat it up as much as you want. 按个人口味放一些 提点辣味
[12:43] l think sort of about a level teaspoon of cayenne. 大约一平匙辣椒粉
[12:48] Hmm, cumin maybe half. 小茴香大约半茶匙
[12:51] Get that in there. 放进去
[12:53] Just half a chilli’s fine. 半个红辣椒就够了
[12:54] Just finely slice it to 细细切
[12:56] give the machine a bit of, you know, help. 帮这机器一点儿忙
[12:58] Thing is, peas, broad beans, they’re very delicate. 豌豆和蚕豆是非常精致的食物
[13:01] Mediterranean, olive oil, lemon juice, all pasta, fish, 地中海风 橄榄油 柠檬汁 意面 鱼
[13:06] but this is different, this is a kind of falafely type thing. 但这个不一样 这属于中东豆香煎饼类

[13:11] l’ve got the chilli in, nice pinch of salt. 红辣椒放进去了 一撮盐

[13:17] Lemon zest is fantastic because you get fragrance from the skin, 柠檬皮很赞因为皮中的清香可以沁入食物

[13:32] Then just give it a nice pulse. 好好搅拌一下
[13:39] So, once you’ve got them to, 只要拌到这个程度
[13:40] sort of, about that sort of consistency, 大约这么稠
[13:43] what l want to do is just put, literally, a teaspoon of flour. 我要做的就是放入一茶匙面粉
[13:48] Don’t put a big load of flour in 别放一大勺
[13:49] because that’s gonna make it claggy. 这样会太粘
[13:51] Mix it up, just enough to bind it. 搅拌一下 只要能粘一块儿就行
[13:54] That way you’ll get juicy filling and crispy outside. 这样做的话出锅时就会外酥里嫩
[14:00] l can smell the cumin already, it’s fantastic. 我已经能闻到小茴香了 很棒
[14:02] Once you’ve got all this mixed up, get yourself another spoon 这些都搅拌好了之后 再拿一把茶匙
[14:07] and it’s it’s called quenelling in French cooking. 这在法国烹饪中叫做压丸子

[14:11] you have to do a posh French perfect thing, 你得做出奢华的法国美食
[14:13] but run it on a spoon three or four times, 只要这样来回压三四次

[20:14] What l want to do is take about half of that, 我要做的就是取出一半

[20:30] I’m gonna make meatballs in the time it takes that pasta to cook. 我要在煮意面的这段时间内做好肉丸
[20:32] I’ve got some fantastic sausages, these are from the butcher. 这儿有一些非常赞的香肠 从肉铺买的
[20:36] Look at them, they’re pretty amazing. 看看 多赞啊
[20:38] You can get any sausage as long as it’s good, 你可以用任何优质香肠

[21:13] l’ve got the quickest, most delicious tomato sauce. 我有最方便最美味的番茄酱汁
[21:17] So, what you do, slice up a couple of cloves of garlic. 你要做的是把几瓣大蒜切片
[21:21] l want to use basil, basil, 我要用一些罗勒
[21:23] tomato’s best friend, no debate there. 罗勒是番茄的最佳搭档 毫无争议

[23:11] thyme, even rosemary, take it off. 百里香 甚至迷迭香也可以 捋下来
[23:13] ln with the meatballs, they’ll crispen up, they’ll look lovely. 放入肉丸中 它们会慢慢蜷缩 非常可爱

[23:20] Sausages are cooked through, the pasta’s now nicely cooked. 香肠已经煎透 意面也煮好了

[23:49] To serve it all l’m going 至于装盘
[23:51] to do is take a nice wadge of my pasta… 我只要取出意面
[23:58] We get my lovely tomato sauce in the middle, load it up, 把番茄酱堆在中央 堆起来
[24:01] because as soon as anyone puts their fork anywhere near it 因为只要把叉子往酱汁旁一放
[24:04] it’s going to cover it all in it. 就可以蘸得满满
[24:06] Then, don’t forget your meatballs. 然后别忘了肉丸
[24:08] Now, obviously, peas and broad beans is my day today 显然 豌豆和蚕豆是我今天的主打
[24:13] and there’s not been a 而现在这儿连一颗
[24:14] single pea or broad bean go anywhere near this. 豌豆或蚕豆都还没见着
[24:17] But the tweak is and l think this is completely genius, 但是我的妙计是 我认为这方法太有才了
[24:20] you get your little peas, you crack them open. 剥开你的小豌豆
[24:24] You know pasta makes you feel happy, lovely meatball, lovely! 意面逗你欢 可爱肉丸惹人爱
[24:28] You have that sweet tomato sauce. 里面堆着甜甜的番茄酱
[24:30] Then you get raw peas going through and they just pop, pop, pop! 一颗颗生豌豆翻滚过去 噗噗作响
[24:34] Sweet, really nice. 甜丝丝 真的很棒
[24:36] Then just finish it with a few lovely little basil leaves. 最后再撒一些可爱的小罗勒叶
[24:40] And that, is a superb dinner. 这真是一顿美餐
[24:42] Ten minutes. So good. 10分钟 如此漂亮
