[01:43] l’ve got this fantastic recipe for pickling vegetables 我有一份关于做腌菜的非常好的菜谱
[01:46] any vegetable that doesn’t mush, 任何不会烂掉的蔬菜皆可
[01:48] like tomatoes, you could use beans, 比如土豆 你可以用豆子
[01:51] runner beans, mushrooms, you could do carrots. 红花菜豆 蘑菇 你可以做胡萝卜
[01:53] You could do aubergines which l’m going to do right now. 你可以做茄子 这正是我现在要做的
[01:56] The brilliant thing about this recipe 这个菜谱的绝妙之处就是
[01:59] is that it’s kind of one of those mother-ship recipes 它有点像主菜谱
[02:02] where one technique, sort of, serves all. 一种技巧可以用到所有的步骤上
[02:06] So, over here l’ve got a litre of water and a litre of vinegar. 这里有一升水和一升醋
[02:11] l’ve used a half decent white wine vinegar, 我已经用了一半上好的白酒醋
[02:13] not particularly expensive. 不一定很贵
[02:14] Bring that to the boil and all you’ve got to do is season that 把加了醋的水煮沸 你要做的就是
[02:18] with a couple of tablespoons of salt. 加若干茶匙的盐调味

[02:21] what’s going to be preserving these lovely vegetables. 腌制美味蔬菜的主要调料

[03:08] Then, what l want to do is 然后我想做的是

[03:24] I’m just going to scrunch some of this lovely oregano into there. 捏碎到这个碗中

[03:34] Finely slice the chilli, or two. 细细剁碎一个红辣椒 或者两个
[03:39] l like my chillies so I’m going to go two, 我喜欢红辣椒 所以我用了两个

[03:43] Erm, garlic just you know, three or four cloves. 你知道的 大蒜三或四瓣即可
[03:49] You can leave the skin on, peel them if you want 你可以把蒜皮留着 也可以剥掉
[03:52] but you ain’t going to eat the garlic its just flavour. 反正你也不用吃大蒜 它只是用来调味的
[03:55] Get the garlic into there. 把大蒜放入碗中
[03:56] Then you want about 500 millilitres of 然后你需要大概五百毫升的
[03:59] oil to cover your vegetables 油来覆盖住蔬菜
[04:01] but l’m going to split my 我要把油平分为
[04:03] oil with sunflower oil and extra virgin oil. 葵花籽油和特级初榨橄榄油
[04:07] And, l’ll tell you why l do that, 我来告诉你为什么我要这么做
[04:09] is because if you just put 因为如果你只放
[04:10] 500 millilitres of extra virgin olive oil 五百毫升的特技初榨橄榄油的话
[04:13] that’s quite an expensive affair, also it’s quite strong. 会挺贵的 加之香味太浓烈

[04:19] Then get your hands in there and just scrunch. 把手放进去 然后捏

[04:27] As soon as your vegetables have had three or four minutes, 一旦蔬菜煮了有三四分钟了
[04:30] get them out of the water 把它们从水里拿出来
[04:32] but most importantly get it into that oil hot. 不过最重要的是要趁热把菜放入调味油中
[04:38] What we’ve done here so far 我们目前为止做到的
[04:40] is we’ve created a place which bacteria hates. 是创造出了一个细菌很讨厌的环境
[04:43] Vinegar, a bit of salt, olive oil. 醋 一点盐 橄榄油

[04:59] With regards to the jars we’re putting them in 至于要放入腌菜的罐子

[05:04] So, what l’ve got here is a load of nice sealable jars. 我这里有一堆品质好的可密封玻璃管

[06:50] So, what l’ve got here is four onions l’ve just roughly chopped 这里有四个我刚刚随便切碎了的洋葱
[06:53] been sweating for 15 minutes. 已加热让其出水十五分钟
[06:55] Purely to bring out that sweetness. 单纯的是把让甜味激发出来
[06:57] Then it’s a combo of sort of, carefully selected spices. 然后是一些精挑细选出来的香辛料的混合物

[07:36] Most good ketchup recipes have a particular mix of spices. 大多数优质的番茄酱都会有独特的香辛料配方
[07:40] So, give them a good old smash up. 使劲地摇匀调料
[07:43] Now, l’m going to add that 现在我要把香辛料加入到
[07:44] to the onions but also at the same time 洋葱之中 同时

[08:34] Then, get this ginger. 拿出生姜
[08:37] Slice this ginger up so it’s a bit easier to get the flavour out. 切碎生姜 使香味更容易挥发出来
[08:42] Add it to the pan. 放入平底锅中
[08:47] Good pinch of pepper, good pinch of salt. 一撮上好的胡椒 一撮盐
[08:52] And then, l’ve got a kilo here of really nice ripe tomatoes. 然后这里有一公斤成熟了的美味番茄
[08:56] Straight in. 直接倒进去
[09:00] And a nice big, big handful of basil. 然后是一大把罗勒
[09:03] Now, the leaves l’ll keep here, and then with these lovely stalks 叶子留着 把茎部

[09:10] They can withstand the 茎部比叶子
[09:12] temperature of the cooking more than the leaves. 更能承受锅中的高温

[09:22] Now, to go with the fresh tomatoes 与色彩鲜艳香味浓郁的
[09:24] which are obviously light and sort of zingy 新鲜番茄搭配在一起的
[09:26] I want to use some passata or some whazed-up tinned tomatoes. 是少许帕萨特番茄酱和罐装番茄泥

[09:33] Now, we’re going to put in 现在我们要放入
[09:34] about 250 millilitres of red wine vinegar. 大约二百五十毫升的红酒醋

[12:24] even though it’s a bit of a miserable day. 即使今天过得有点糟糕
[12:27] I’m going to use this ketchup in one of my little recipes. 我要在我的一份菜谱中使用这个番茄酱
[12:47] Right, I’m going to make the best steak and chips on the BBQ 我要做最好的烧烤牛排和薯片

[13:07] When it comes to steaks, my opinion is the best steak for the job 说到牛排 我的意见是最好的牛排

[13:35] what you can do is actually push it into the steak. 再把肥肉塞到牛排里去

[13:42] What you’re doing is increasing the marbling and the flavour. 这样做可以均匀肥瘦搭配 增加香味
[13:45] Then, you can get some nice bits of rosemary 接着 拿一些迷迭香
[13:48] and just break it up with your fingers, put it over the steak. 用手撕碎 撒在牛排上
[13:51] Again, push it in to where you’ve pushed that lovely fat. 塞一些到之前塞过肥肉的地方
[13:54] So, when the fat is melting it’s melting with rosemary around 肥肉出油之后就会带出迷迭香的味道
[13:58] and having a bit of a boogie woogie. 就像一起跳舞一样
[14:00] So, erm, in there like that. 就那样放在这
[14:03] And then, pepper, pepper and steak. 然后放胡椒粉 牛排配胡椒粉

[14:08] And salt as well. 还有盐
[14:11] Rib eye’s good and then l’m going to put that to the side. 肋眼牛排搞定了 把它放在一边

[14:17] Now, what l’ve done is l’ve got a nice slightly waxy erm, potato. 我手上的马铃薯已经有些软
[14:22] I’ve left the skin on, par boiled it in centimetre slices 不削皮 切成一厘米左右的薄片
[14:26] for about five, six minutes 在水里煮五六分钟
[14:28] just to take the rawness out of the potato. 煮得稍微有点熟
[14:30] They’re three quarters 现在是七分熟
[14:31] cooked but holding their shape nice and strong. 这样马铃薯成型很好 不会散开
[14:34] So, what l want to do is get some rosemary, some sage. 拿些迷迭香 鼠尾草
[14:39] Just tear it up, right, 直接撕碎
[14:41] and then just get a little bit of lemon zest. 再加一点柠檬皮屑
[14:44] Use your knife or a speed peeler 用你的小刀 或削皮器
[14:46] to take those lovely little bits of yellow skin off the lemon. 刮下一些柠檬黄色的外皮
[14:50] And then, some nice extra virgin olive oil. 再加些特级初榨橄榄油
[14:54] So, get that in there. 把那些放那
[14:56] I want to lightly dress the potatoes in the olive oil. 我要把马铃薯稍微粘上些橄榄油
[14:59] And, a nice pinch of salt. 放一小撮盐

[15:08] And just get your hands 然后直接用手
[15:10] in and just give them a lovely toss around. 轻轻地抓一下
[15:13] So, we can get this on the BBQ now. 然后就可以放到烤网上了

[19:33] We’ve got a bit of colour happening there. 颜色有些变了
[19:35] A lot of sweetness is being created. 味道很香
[19:38] That can just go straight onto the table like that, 把那些直接倒在桌子上

[19:43] You can do this in a food processor if you’re clever. 你也可以把这些放到料理机里处理

[20:20] Flavour wise, what l want 我要做的是
[20:21] to do is have a couple of leaves of bay. 拿一些月桂叶
[20:23] Bay is a brilliant, brilliant herb 在做酸辣酱 泡菜之类时
[20:26] as far as chutneys and pickles and stuff like that are concerned. 月桂叶非常好用
[20:30] So, two leaves of bay in there. 加入两片月桂叶
[20:32] I want a nice, big sprig of rosemary. 一大支迷迭香
[20:36] Then, l want to go balsamic vinegar. 再加香醋
[20:38] You need a 150mls of this and this is a 500ml bottle 要加一百五十毫升 这瓶有五百毫升
[20:42] so it’s about just under a third of a bottle. 所以稍微少于三分之一瓶就可以了
[20:46] Lovely. Job done. 真不错 搞定了
[20:48] So, that can go there. Get the balsamic in. 把它放在那里 加好了香醋
[20:51] Give it a little mix up and a shaky-shaky. 摇一下 拌匀
[20:55] Get yourself a bit of cinnamon, about that much. 加些肉桂 这么多就够
[21:01] Get it in there. That’ll give it a nice bit of spice. 放到那里 加点调味品

[21:27] Then we turn it down to a low heat 然后关小火
[21:30] and simmer that for about 25, 30 minutes. 炖二十五至三十分钟

[22:01] l never thought it was good. 但有点奇怪
[22:03] Do yourself a favour and 自己出去
[22:05] buy some nice sour dough country-style bread. 买一些乡村风格的酸面团面包
[22:08] That’ll make it really spesh. 会让味道变得很特别
[22:10] l’ll do three slices l think. 我要用到三片
[22:11] Then what l’m going to do 现在要做的是
[22:13] is put the three slices in a tray like this. 把这三片面包像这样放到烤盘里
[22:17] Whack this under the grill. 把这个放到烤炉里
[22:19] While that’s toasting, 面包已经在烤了
[22:20] l want to get the mix for the Welsh Rarebit. 现在我要做干酪土司的涂料
[22:22] So, l want a 150 grams of crème fraiche. 我要用一百五十克的法式鲜奶油
[22:27] You could use sour cream 你也可以用酸奶油
[22:28] but l think crème fraiche is slightly better. 但我觉得法式鲜奶油略胜一筹
[22:31] Just about half this. 用一半
[22:33] The yolks of two eggs. 两个蛋黄
[22:40] Get that in, these are from my chick chicks. 放进去 是我养的鸡生的蛋
[22:43] There we go, a nice big handful of quality cheddar cheese. 好了 加一大把优质的切达干酪
[22:50] A pinch of pepper, a pinch of salt. 一撮胡椒粉 一撮盐
[22:53] And then, l just want a little teaspoon of mustard powder. 然后 加一小茶匙的芥末粉
[22:59] In there like that. 像这样 放到里面
[23:00] So, give it a good old mix up. 好好地搅拌
[23:05] Right. Let’s just check that toast. 好 我们来看下土司
[23:09] Pretty quick in here, turn it over. 很快地把它翻过来
[23:12] Lovely. OK. 很不错
[23:15] Now, just have a look at this. 看看这个
[23:17] This has only been cooking five, ten minutes. 只煮了五或十分钟
[23:20] You can see how it’s thickened out, it’s going nice and dark. 你可以看到这已经变稠了 颜色变深
[23:25] You can just smell it’s really good. 闻起来味道真好
[23:27] That needs to go on a lower heat, put that on a very low heat. 这个需要用小火 放在小火上

[23:46] A little, sort of, flat desert spoon 用甜点勺抹平
[23:49] is more than enough, it’s got a right kick to it! 就足够了 味道正好
[23:52] Hmm, maybe a heaped teaspoon. 或者满满的一茶匙
[23:54] Just smear it like that. 像这样地涂上去
[23:58] The lovely thing about this is you don’t just get chilli and heat 美妙的是 这不仅仅很辣 很热乎

[24:04] You’ve got the smoky flavour which will make it undoubtedly 带些呛口的味道 毫无疑问

[24:09] All l’m going to do now is give it a good old mix 我要做的是 好好地搅拌
[24:12] and just pour it out onto 倒在土司上
[24:14] the toast and help it fall around the edges. 让它从面包片上流下来
[24:18] You don’t want it to fall over the edges too much. 但不要流下太多
[24:21] I don’t mind a bit of mess. Don’t get me wrong. 有一点点乱没关系 但不要太过
[24:23] A bit of edge business is fine. 流下一点点就好
[24:25] And sometimes when the bits 有时候 在面包片边上
[24:27] go down the edge and they go a bit crispy, 流下来的干酪 会变得很脆
